Raisin Walnut Slice (tastes like buttertarts)
------------------
Base:
1/2 c butter/margarine
1/2 c brown sugar
1 1/2 cups flour
Mix and rub together til it resembles cornmeal. Press in a 9x9 pan.
Bake in 300 degree oven for 20 minutes.
When done, remove pan - put oven up to 325 degrees
Topping:
3 eggs
1 1/2 cups brown sugar
1 t vanilla
2 t flour
1 cup raisins (I use sultanas, if too dry, soak a bit in hot water, then squeeze out)
1/2 cup chopped walnuts
Mix together and pour over partially baked crust.
Bake at 325 degrees for 35 minutes

Lemon Bars
Shortbread Crust:
1/2 cup (1 stick) Butter/margarine, room temperature
1/4 cup confectioner's sugar(powdered or icing)
1 cup all purpose flour
1/8 teaspoon salt
Lemon Filling:
1 cup (granulated white sugar
2 large eggs
1/3 cup fresh lemon juice(approximately two large lemons)
1 Tbsp grated lemon zest
3 Tbsp all purpose flour
Garnish:
Confectioner's sugar
Lemon Bars: Preheat oven to 350 degrees F (177 degrees C) and place the oven rack in the center of the oven. Butter, or spray with a non stick vegetable spray, an 8 x 8 inch (20 x 20 cm) pan.Shortbread Crust: In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the flour and salt and beat until the dough just comes together. Press onto the bottom of your prepared pan and bake for about 20 minutes, or until lightly browned. Remove from oven and place on a wire rack to cool while you make the filling.
Lemon Filling:In your electric mixer, or with a hand mixer, beat the sugar and eggs until nice and smooth. Add the lemon juice and zest and stir to combine. Fold in the flour. Pour the filling over the shortbread crust and bake for about 20 minutes, or until the filling has set. Remove from oven and place on a wire rack to cool.
Cut and dust with confectioners sugar.

CheeseCake Squares
Graham Cracker Crust:
2 cups graham wafer crumbs
2 tablespoons granulated white sugar
1/2 cup unsalted butter, melted
Cheesecake Filling:
2 - 8 ounces cream cheese, softened
1/2 cup granulated white sugar
1 tablespoon fresh lemon juice
1 teaspoon grated lemon zest
1 teaspoon pure vanilla extract
2 large eggs
Garnish: (Optional)Fresh Berries or canned cherry pie filling.
Cheesecake Squares: Preheat oven to 325 degrees F and place the rack in the center of the oven. Have ready a 9 x 13 x 2 inch (23 x 33 x 5 cm) square baking pan that has been lined with aluminum foil across the bottom and up two opposite sides of the pan.
Graham Cracker Crust: In a small bowl combine the graham cracker crumbs, sugar, and melted butter. Press mixture evenly over the bottom of the prepared pan. Bake in preheated oven for 10 minutes. Set aside to cool.
Increase the oven temperature to 350 degrees F.
Cheesecake Filling: In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese until smooth. Add the sugar, lemon juice, lemon zest, and vanilla extract and beat until smooth. Add the eggs, one at a time, beating until incorporated. Scrape down the sides of the bowl, as needed. Pour the cheesecake filling over the graham cracker base and bake for about 20 minutes or until the cheesecake batter is just set.
Remove from oven and place on a wire rack to cool. Place in the refrigerator for a few hours to make the squares easier to cut. To cut into squares - place on a cutting board, remove the foil, and with a sharp knife, cut into 2 inch squares. Have a damp cloth on hand to wipe the knife between cuts.
Garnish with fresh berries or Cherry pie filling.

Butterscotch Brownies
---------------------
1/4 c butter or margarine
1 c brown sugar, packed
1 egg
1/2 tsp vanilla
3/4 c flour
1 tsp baking powder
1/4 tsp salt
1/2 c chopped walnuts
Melt butter and add to sugar in a bowl, stir together. Add egg and vanilla, stir.
Add flour, baking powder, salt, nuts, and mix well.
Spread in greased 8X8 pan, bake for about 30 minutes til sides start pulling away from pan.
Icing
-----
2 T butter or margarine
1/4 c brown sugar, packed
2 T milk
1 c icing sugar
Combine butter, brown sugar and milk in saucepan. Bring to a boil and simmer two minutes. Remove from heat.
When it's cooled, add icing sugar and stir well. May need to add additional icing sugar or milk to make spreadable consistency...
Frost brownies. YUM!

Butterscotch/PB Confetti Squares

1/4 cup butter/margarine
1/2 cup peanut butter
1 cup butterscotch chips
250g bag mini coloured marshmallows
(can add 1/2 cup chopped walnuts and/or 1/2 cup medium coconut - I add both)
Melt butter and peanut butter in large pan on low heat. Stir in chips til melted. Cool til barely warm. Add marshmallows, nuts, and coconut - stir till all coated.
Line 9X9 pan with wax paper, pack mixture in, and refrigerate.

haven't tried them myself but they look easy enough and can't really go wrong with chocolate, nutella, and boubon around the holiday

Time for others to add their recipes - thought it would be nice to have them all in one thread. That's what I initially started doing, started threads for the basic recipe groups, but I realized they aren't being used that way.
I've asked many times for categories for recipes be done as stickies, but that seems to be a no-go.

Pineapple tarts/shortcakes - recipe makes 24

I needed a recipe to make something with fresh pineapple, found many with canned, and this is the only one which fit for me. Turns out it was easy to make, and very yummy.
Pineapple Jam filling

3/4 of a medium pineapple, cut in small pieces
2/3 cup sugar (can add more near the end if it needs more)
2 Tbsp lemon juice
2 tsp. cornstarch
Bring to a boil the pineapple, sugar, and lemon juice. Let simmer slowly about 20 minutes or more til it's thickened up. Taste to see if sweet enough for you, can add more sugar now. Then prinkle the cornstarch on it, 1/2 tsp. at a time and stir in until thickened.
Remove from heat and cool at room temperature. This can keep in the fridge for a week if you aren't using it right away. It also thickens a bit more upon standing.
Tarts/shortcakes
----------------
2 1/2 cups flour
1 cup margarine, room temp.
1/4 tsp. salt
2 egg yolks
4 Tbsp. icing sugar
2 Tbsp. cornstarch
Mix the flour, cornstarch, salt and sugar in a bowl. Add the butter, egg yolks, and flour. Mix well, and knead a bit.
Divide the dough into 24 parts, make about the size of golfballs.
Put each into a muffin tin hollow (ungreased), and press in, going up the sides just a little bit.
Put about a tsp of filling in each one.
Bake at 350 degrees about 15-20 minutes. (mine are a tad overbaked)
