peanut butter cookies. It was DH's birthday yesterday and he doesn't like any sweets, but he DOES like PB cookies, so we made a batch and stuck a candle in some stacked ones. LOL.

actually, I let the kids make them so technically I didn't bake anything. I just supervised. We used low fat no name peanut butter. Bad idea! Stick to the Kraft green jar!! The cookies ended up being super greasy and they spread themselves too thin on the sheet.

Dear Lord. I think fall must be in the air for I woke up today with an overwhelming urge to can and preserve and bake and squirrel things away in preparation for winter. This feeling is normal; what's odd is that it usually happens MUCH later in the summer than this.

Anyway, tonight I made chocolate chip muffins.

there is a cheesecake baking RIGHT now in my oven!!
One minute I was just sitting here wondering how long those packages of cream cheese have been in the downstairs fridge as well as that container of Greek yogurt and the next thing I am in a panic mixing everything together!!
( cheese dates were July 14th, yogurt was July 28 )

Made it as low cal and in sweetness as possible with Stevia, raw cacao powder, vanilla and some other extracts.
Normally when people do that graham cracker crust they melt butter, but this time for my gluten free crust I chose flaked coconut, coconut flour and oatmeal pulsed to a crumblike size, cinnamon and then wet it with unsweetened applesauce.
    Sure hope it turns out!!

The garden muffins sound interesting. Are they savoury rather than sweet?

Strange that you feel like that because the past few weeks ive been freezing fresh fruit in preparation for winter. Im also making Borscht soup and freezing it in containers. Lots of fresh produce around so might as well use it
