    "We better use this fruit up" muffins. Not a real recipe but a good title for what they are. I have a basic muffin recipe and then toss things from the fridge or freezer. Sometimes they're a mishmash but they always taste good and get eaten lol.

    I baked these Chewy Coconut Bars this weekend. They were delicious. I recommend DOUBLING the amount of coconut it calls for and maybe cut back on the amount of sugar by about 1/4 cup. I also used half vanilla extract half almond. delicious with the changes.

    yesterday afternoon could NOT resist making up 2 more tomato pies! Yep, if you've never made one try!! Delicious, fresh tasting, oh what can I say? this will most def. be going on our Christmas dinner menu as an appetizer!

    I just searched the web to find variations of recipes and then settled making mine this way using store bought frozen crusts.

    Ingredients

    1 box 9" frozen pie crust ( 2 in box )
    10 large tomatoes
    1 cup sliced, sauteed mushrooms
    1 cup diced green onions
    1 cup diced fresh spinach
    1/2 cup diced each of fresh basil leaves and fresh cilantro
    4 cups any mixture of grated cheese you like, we used Old cheddar/Mozzarella and Parmesan
    salt and pepper to your liking

    Preheat the oven to 400 degrees

    - prepare 10 large tomatoes for roasting
    - wash and slice an x on the bottom of each and cut out the top stem part
    - put bottom x side up on a large baking tray, roast for 1 hour

    As they cook thaw the 2 pie crusts for 10 min. at room temp and prick them with a fork all over and
    bake in the same 400 degree oven 9-11 minutes, remove and let them cool

    Now back to the tomatoes, when finished roasting remove from oven and
    Reduce oven to 350 degrees.

    - immerse one at a time gently into a sink of very cold water
    ( the inside strainer style bowl of a salad spinner works great to hold and nestle them)
    - let them really cool in there as you gently remove the skins
    - hold each in palm of hand and squeeze whatever seeds will easily fall out as you go ( no man handling )
    - place them on many layers of paper towel and roll up like a jelly roll to press out more water/juice ( gently )

    - Arrange mushrooms and green onions evenly in bottom of each pie crust
    - Place the tomato mixture in a large bowl and add the herbs, spinach, salt and pepper, and gently work the herbs through
    - scoop half into each pie crust on top of the mushrooms and green onion
    - top each with 2 cups of the grated cheese

    Bake for 45 min at 350 degrees....let cool, slice and yummo! enjoy

    I made some chocolate spread brownies again. That's the last of the Laura Secord milk chocolate spread.
    Served that with a scoop of chocolate ice cream for tonight's desert.

    I made Rice Krispie squares. It's so hot here, I don't want to turn on the oven and create completion for the air conditioning. It reached 40 on my deck today.

    Last night LO and I made a pan of oatmeal mini-chocolate chip squares. They are pretty good, but they keep giving me heartburn...one of those things about being pregnant with twins.

    I don't bake very often, but found some peanut butter disks on clearance at the Bulk Barn. They are slightly sweeter than regular peanut butter. I would appreciate any recipes or ideas anyone has on how to use them. They look like this:
