I made apple 'pie' on puff pastry. I cooked down my apples, removed them from the liquid and made the liquid into a caramel sauce.

Put the apples without liquid onto the puff pastry and topped with delicious streusel topping. Next time I will bake the puff pastry first, alone, as the parts under the apples didn't puff at all. But it was still amazing!

I served it with ice cream and the reserved apple caramel sauce on top.

Lime coconut cake. It tastes okay, especially with vanilla ice cream.

I made black bean chocolate brownies this morning and this afternoon a big batch of cashew brittle. Treats for lunch bags this week.

2 banana loaves
1 dozen zucchini biscuits
3 boneless skinless chicken breasts
2 pans of candied pecans
1 small pork roast

This afternoon I made
2x apple crumble pie
1x fudgey pecan pie
9x12" pan of confetti squares
dark chocolate fudge and peanut butter fudge = 2lbs of fudge

Wow! I'm so far behind in baking anything these days, but since I've last posted (which was quite some time ago) my kids have flown the nest so now it's just me....will have to learn how to bake for one ;( Ill let you know what I come up with!
