    I just made brownies this morning, Costco had boxes of Ghirardelli Triple Chocolate brownie mix on sale this week so we decided to try. So far very tasty!

    Baked a double batch of lemon poppyseed muffins today. Ate 5. So yummy, couldn't help myself. Diet? What diet?

    Tried to make a different sort of healthier cookie for DH using organic coconut palm sugar ( looks and measures like brown sugar) and 2 Tblsp ground flax seed/5 Tblsp water to replace the egg. Coconut oil as the fat, almond flour, rolled oats, cinnamon, vanilla and pecans. Anyways, wow. They taste ok but I better serve him a big cup of tea with these......they are ( cough) just a tad ( cough ) dry. lol!! I tried.

    I watched DH make a cheesecake, does that count? he used stevia in the filling, made the crust GF and made a 3 berry syrupy topping ( again sugar free) so guiltless dessert.

    WOB, it makes it tough for me, of course - and for me cooking for him, I have to still balance nutrition - but honestly, he could care less about food/eating (gah! I can't relate...) so sometimes it's just gotta be things he loves, because I know he'll eat them. Plus, with him being off work now, he's not burning off calories, so barely feels like eating at all.

    I made these for LO 1.5wks ago, it made 18 smaller muffins. He gobbled them up quickly...then he got bored with them by the end of the batch. I'm writing an exam in 6 days time, so I'll have to get back to my studying now.

    Carrot Muffins
    1 cup raisins
    2 cups warm water
    2 cups all-purpose flour
    1 ½ tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    3/4 cup brown sugar
    2 tsp ground cinnamon
    2 eggs
    200ml vegetable or canola oil (I replaced half with unsweetened apple sauce)

    1 tsp vanilla extract
    2 cups shredded carrots (approx 4 medium carrots)

    Preheat your oven to 180C.
    Soak raisins in warm water for 15 minutes, drain and set aside.
    Sift together the dry ingredients in a medium bowl and stir to combine.
    Beat together the eggs, oil and vanilla extract. Add the carrots and raisins and stir to combine.
    Gradually fold in the dry ingredients, taking care not to over mix the batter.
    Pour the muffin mixture into a 12 x muffin tin that has been lined with patty pan cases.
    Bake for 20 – 25 minutes, or until a skewer inserted into the centre comes out clean.
    Cool in the muffin tin for 5 minutes before turning out onto a wire rack to cool.
    Store in an airtight container for up to 5 days in the fridge.

    I think this will be my new GF go to bread! I have made it 2 times now and hubby is using to too. No yeast, no waiting, no fuss. I forget If I posted the recipe, so I'll post it again.


    1 1/2 cups almond flour
    3/4 cup arrowroot powder
    1/4 cup golden flaxmeal
    1/2 tsp sea salt
    1/2 tsp baking soda
    4 eggs
    1 tsp honey
    1 tsp apple cider vinegar

    1. In medium bowl combine all dry ingredients
    2. In larger bowl blend eggs 3-5 min. until frothy
    3. Stir in honey and vinegar into eggs
    4. Mix DRY ingredients into WET
    5. Scoop batter into well greased bread loaf pan
    6. Bake at 350 for 30-35 minutes

    When it is totally cooled off I slice it all, bagging it into Ziplocs, freezing most of them just to be safe,as bread does not move quickly enough here because of diet restrictions. Happy baking!
