I would love it if you would post your favorite plant-based/vegan recipes here. I have a few "tried and true" ones, but am always looking for new dishes to make.
Also, if you have a favorite vegan recipe book, one that you refer to again and again, please let me know!
Here is one of my favorite recipes to make - especially nice in the winter. Using fresh ginger really makes it flavorful and adds a bit of warmth.
Spicy Daal
Serves 6
· 2 cups red lentils
· 2 tablespoons olive oil
· 1 yellow onion, finely chopped
· 1 teaspoon cumin seeds
· 1/4 teaspoon ground cardamom
· 4 cloves garlic, minced
· 4 cups vegetable broth
· 1 1/2 cups chopped tomatoes with their juice
· 1/3 cup chopped fresh cilantro
· 2 tablespoons minced fresh ginger
· 1 fresh jalapeno pepper, minced
· 1 teaspoon ground turmeric
· 1 teaspoon salt
Place the lentils on a clean, flat surface, preferably light in color to visually aid in the sorting. Sort through the lentils and discard any pebbles or chaff.
Place the sorted lentils in a fine mesh strainer and rinse with cold running water, drain.
Heat the oil in a large heavy bottom 5-quart pan over medium-high heat, and sauté the onion until golden brown, about 5 minutes.
Add the cumin seeds, cardamom, and garlic to the pan and stir until the spices are just fragrant, about 2 minutes.
Add the broth, tomatoes, lentils, cilantro, ginger, jalapeño pepper, turmeric and salt. Bring to a boil over high heat; reduce the heat to low, cover, and simmer, stirring often, until lentils become soft, about 15 minutes.This thread is currently associated with: N/A

Love this from Giada. The original (as posted here) calls for honey and parmesan, not vegan obviously, but I put agave instead and omit the parmesan. I haven't tried it but you could probably use Vegan topping (Nutritional yeast I believe). I make this at the start of the week and leave it in the fridge, it just gets better every day.
Orzo with Smokey Tomato Vinaigrette
Ingredients
1 pound (2 dry pints) cherry tomatoes
1 pound orzo pasta
Vinaigrette:
1/2 cup packed fresh basil leaves, torn
2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1 tablespoon smoked salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/3 cup grated Parmesan
Directions
Place the tomatoes in a large nonstick skillet over medium-high heat. Cook, shaking the pan occasionally, until the tomatoes are tender and the skins are charred in spots, about 15 minutes. Set aside to cool.
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a large serving bowl.
For the vinaigrette: Place the tomatoes, basil, vinegar, olive oil, honey, smoked salt, and pepper in a blender. Blend until smooth.
Pour the vinaigrette over the pasta and toss until coated. Sprinkle with Parmesan cheese. Season with smoked salt and pepper, to taste, and serve.

i love vegan recipes, as long as youre not expecting to make something vegan and have it taste not vegan (like cheese, chicken, etc) you're good to go. beans are my fav meat substitute along with mushrooms and tofu

try this Thai Curry Tofu
1 tablespoon canola oil
1 (12 ounce) package extra-firm tofu, drained and cubed
1 tablespoon seasoned salt, or to taste
1 tablespoon butter or margarine
1 small onion, chopped
3 cloves garlic, minced
1 (10 ounce) can coconut milk
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh cilantro
