Looking for homemade salsa recipe & tomato bruschetta topping, please
I have found someone that is willing to give me a whole bunch of tomatoes, I really would like to try & make homemade salsa as well as some tomato bruschetta topping.
I'm hoping to put these recipes in sealers/major jars for later use. Also please include if recipe can be doubled, etc...
Also if you have a salsa recipe that inlcudes corn & beans that would be fabulous!

Hi Nancy!
MY favourite homemade salsa recipe is a simple pico de gallo!!! Fresh tomatoes, red onion, lime juice, jalapenos, salt & pepper and fresh cilantro!!! SOOO good!!!
As for bruschetta, a simple recipe for that would be to sautee some finely chopped onion with minced garlic then mix it with fresh tomatoes and fresh basil. Yum!

Easy bruschetta: Drizzle some olive oil over sliced bread and toast in the oven. Once the bread is done, peel some garlic and rub on the toast. As for the topping, chop tomatoes and onion in a ratio of 3 to 1 (3 medium tomatoes to 1 medium onion) and mix with a bit of olive oil, salt, pepper and a bit of dry basil (you can use fresh if you like). Squeeze half a lemon and mix with the topping. Spread the topping over the bread and enjoy. I also like to add some feta or goat cheese on top.

I found a recipe online for black bean & corn salsa I made it the other day but have not tried it yet. Hoping it's good it's quite saucy, I'm think I will have to remove some liquid before serving with chips. If it's good I will post the recipe early next week!
