    You can ripen green tomatoes all winter long. Sort by amount of greeness. Then for each pile put into either a paper bag, or a cardboard box. It has to be paper or they won't ripen.
    Then just keep checking them every few days and use as needed. I had mjne in a plastic bag no ripening, then moved them to a mandarin orange box and voila ripe tomatos! Try it, it works.

    It's a pity that these tomatoes are green. I have two ways. One is to make salsa or chutney. the other one is to put some ripen applea and these green tomatoes together. I hope it can help you.
