Soup is good any time but as cold as it is today I may just have to make some soup.

Stuffed Pepper Soup
Serve 6
398 cals 5.6g fat (1.9g saturated) (without cheese)
1lb LEAN ground beef
1 lg onion, diced
2 cups rice (I love to use wild rice)
1 can Hunts flavored diced tomatoes (Red pepper and fennel, roasted garlic, sweet onion etc) (14.5oz can)
1 can tomato sauce (14.5oz can)
1 tsp dried oregano
1 tsp basil
½ tsp salt
¼ tsp pepper
1 box chicken stock (32oz)
2 cups water
2 tbsp powdered beef stock
3 bell peppers (I use 1 big green pepper then 4-5 red and 4-5 yellow BABY bell peppers)
Cheese for topping (optional)
Fresh cracked black pepper for garnish (optonal)
In a large soup pot coated with cooking spray, over medium-high heat, brown the grown beef with the onions and rice. I know that sounds odd, but browning the rice gives it a nice nutty flavor – do not allow it to burn!!
Meanwhile dice your peppers into small ½’ pieces, set side
Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, water, and powdered beef stock, then allow it to come to a boil.
Reduce heat, cover and allow it to cook 20 minutes then add the peppers and allow it to cook another 20-30 minutes (some types of rice may need longer cooking times)

I have a bad cold so made a basic chicken soup last night. But I bought some Thai chillies to throw in - OMG those little things are HOT!

This is a great recipe that you can fix to your taste! The longer it simmers the better. Top with crushed tortilla chips and shredded cheese. Enjoy!
Ingredients:
- 2 quarts water
- 8 skinless, boneless chicken breast halves
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons dried parsley
- 1 tablespoon onion powder
- 5 cubes chicken bouillon
- 3 tablespoons olive oil
- 1 onion, chopped
- 1 (8 ounce) container sour cream
- 2 (16 ounce) cans chili beans, un-drained
- 1 (15 ounce) can whole kernel corn, drained
- 3 tablespoons chili powder
- 1 (10.75 ounce) can condensed tomato soup
- 1 (14.5 ounce) can whole peeled tomatoes
- 2 (14.5 ounce) cans peeled and diced tomatoes
- 1 (16 ounce) jar chunky salsa
- 3 cloves garlic, chopped
How To:- In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon cubes. Bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear. Remove chicken, reserve broth. Shred chicken.
- In a large pot over medium heat, cook onion and garlic in olive oil until slightly browned. Stir in salsa, diced tomatoes, whole tomatoes, tomato soup, chili powder, corn, chili beans, sour cream, shredded chicken and 5 cups broth. Simmer 30 minutes.
- PREP 15 mins
- COOK 30 mins
- READY IN 45 mins

What about cold, rainy summer days, LOL
I like to make a super simple roasted tomato sop. I just roast a pan of roma tomatoes that I've cut in half and drizzled in olive oil, salt and pepper. When they are nicely browned, I pour them into the blender with roasted garlic, cayenne pepper, blend, then add some cream and blend again. Easy and deliciousWe all need a little sunshine every now and then

Chicken Tortilla Soup
This tortilla soup tastes better than anything you can get at a restaurant. And it's healthy too! Don't let the long list of ingredients fool you. All you do is dump everything into the slow cooker and walk away. Garnish with grated Cheddar, avocadoes, and a splash of fresh lime juice.
Ingredients:
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
How To:
- Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
- Preheat oven to 400 degrees F (200 degrees C).
- Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
- Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.
- PREP 30 mins
- COOK 8 hrs
- READY IN 8 hrs 30 mins

Wonton soup
The broth is just chicken stock with a splash of soy sauce. The wonton mix is 1lb ground pork, 1tbsp seasme oil, 1tbsp light soy sauce, and a cut up green onion. Mixed it all together and put about a teaspoon worth in the centre of a mini wonton. Put some egg wash (1 egg with a little water whisked together) around the perimeter of the wonton and seal into a triangle. Take the left and right points with a little more egg wash and pinch them together. Boil the wontons in plain boiling water until they float (around 4 mins) and then take out with a slotted spoon and put into a bowl. Then pour broth over top and toss in a few green onions. Yummy.
