I didn't have a thread that I could fit these into, I may change the title once I get a few more recipes but here goes.

Pickled Pepper Rings
For the Brine
2 cups white vinegar
2 cups water
1/2 cup sugar
tumeric (just a touch to colour the brine)
For the jars
per pint jar (double if using quarts)
1 clove of garlic
1 tsp pickling salt
1 tsp vegetable oil
a small head of fresh dill
Directions
1. Bring to a boil first 4 ingredients
2. Wash peppers and cut into rings (remove the seeds)
3. Place garlic, dill, salt and oil in sterilized jars; pack in peppers
4. Pour hot brine over leaving 1/4 inch head space
5. Wipe rims, seal and hot water bath for 10 min.

How to make ice box pickles.......6 cups sliced, unpeeled cucumbers
1 cup sliced red onion
1 cup sliced green bell pepper
1 Tablespoon celery seed
1 Tablespoon salt
2 cups white sugar
1 cup white vinegar
Combine all ingredients in a glass jar or crock. Cover with water and refrigerate. You can eat them immediately, but I will tell you that the pickles are much, much tastier if you let them sit in the refrigerator for a few weeks.
