Awesome surprise overwintered carrots. These are about half of my carrot harvest from today. They are still crunchy and delicious. There is another 10 by 2 foot section that I didn't get to pick last year before the snow came for good. I will have to pick them ASAP because they will get wrecked if they start to grow again.

Awesome I can't believe they'd survive the winter we had.

it's like you had a cold cellar storage find
and the rabbits and such did not get to them before you did

Cream of carrot soup with dried tarragon would take care of the carrots if you are not roasting them or putting them into a broth/soup.
Most impressive beyond the winter cold storage part is that the carrots all have one nice root-no forking! And your local wildlife did not find the "stash" of vegetables.

We saw our rabbit this afternoon. S/he has been eating the Swiss chard that survived and was regrowing. We always have lots of veggies to share.

It's the feral cats that I don't want in our yard.

Those are some nice recipe ideas. I froze a bunch and yesterday I boiled some and dressed them with fig dressing. Yum.

Fig dressing? Such a thing exists?
Yesterday I noticed green stalks-either onion or garlic- in the smaller veg garden. Don't know which parent planted them. Also thinner green stalks farther away--not carrots but beans? Had been told in November that garden had been culled but there are flower stalks to cut back, bark/wood chunks to rake and to bin, etc. Would love to do a fence makeover-have to see who will buy the fencing if it's not sold out yet at CT.

Yes, it's Splendido Fig and Balsamic Vinegar dressing.

There is always a ton of work to do in the garden, eh?

Fencing is expensive but worth it, in my opinion.

I like figs but cannot like basic vinegar or its variants. May have to try the dressing one day to see if it can meld with a salad and not offput the nasal passages!

Regarding garden work-there seems to be cleanup that could have been done last year before planting but I guess it was seen as a bother. I could not stand the wood chunks underfoot. Might have to tackle the bothersome wood just to say "it's finally gone." Better for the soil to have the sun and the rain. Don't know what's rustling in the euonymus though-am hoping it's not a rodent.
