I planted Zucchini just to be able to make some hotdog & hamburger relish. If you plan to bake a yummy cake or muffins put the shredded veggie in a dishtowel and wring out the excess juices.

yep!! both lecale and bluerose listed much of what I would have. zucchini muffins are fantastic and nutritious and your DH will never taste the veg in them! lol When undecided freeze it ( after washing, chopping or grating it all) for sure as a recipe will eventually come along for you to use

thank's ladies for your suggestions, now i remember one of our ladies at the Church used to bring zucchini when we had Christmas supper.....have to find out her recipe......
Walk, muffins are a great idea, DH can't resist muffins of any kind lolThank's to DH who told me the grumpy Garfield was not at all representative of who i am

Maybe some of the zucchini could be quartered and fried 'til light golden in oil on stovetop and seasoned with salt and white pepper when removed from the pan. Makes a great side dish for you when you don't want salad.
If you have back issues of Food & Drink (or go to www.lcbo.ca), look for zucchini fritters and the like.
Large zucchini seems to be a summer garden gift that sends lots of folks finding a way to avoid them. My brother's friend gave us two large ones. I think I made use of one but tired to find the enthusiasm to use up number two (it went to the compost pail).2021-Bring on the sunshine, sweets & online shopping.

I had a couple of relatives in the Niagara area that could have kept you in zucchini one summer, Angela273! I don't know why so many were planted or so big.
