    I made Bruschetta this morning, using Italian tomatoes, garlic, chopped up fresh fine herbs, garlic and extra Virgin olive oïl. Im interested in knowing how other people make their bruschetta. I prefer not to use feta cheese because hubby doesnt like feta . So how about posting some of your Bruschetta recipes?

    chilean bruschetta- Pebre




    4 tomatoes
    2 green chillies
    1 onion
    1 piece of garlic
    1 small green capsicum
    1 spoon of parsley
    3 spoons of coriander
    4 spoons of olive oil

    salt and pepper
    you have to peel the tomatoes and the garlic. Than chop the tomatoes and capsicum in small dices, chop the onions and garlic, parsley, coriander and chillies (aji) in very small pieces.     Chiliean people normally eat it with sopaipilla (fried pumkin bread), "normal" bread, hotdogs, chorizos ....

    You can also try bruschetta with red onions, tomato, and basil leaves...

    My bruschetta recipe is pretty basic. Chopped tomatoes, crushed garlic, basil, olive oil and sometimes red onion. Depending on how I feel, I add a splash of balsamic vinegar. I love balsamic vinegar and oil with crusty bread so I get both that taste and the bruschetta flavours. I can't eat cheese so I never use it unless I'm making it for guests and then I use mozza pieces or gouda.
