I always, always wanted to know how to play the piano. My two oldest sisters had lessons, but the second one didn't like it, so then as other kids came along, my parents didn't continue with having us take them.
Sure, I could have done it as an adult, but it's just not the same.

Off the top of my head:
-know how to drive a manual car (DH has offered to teach me but everyone we know drives automatic)
-Play the guitar
-Know how to sew. I bought a sewing machine but I'm still not very good. Some day I'd like to take a course.
-Knit. I bought all the supplies so I'm trying to teach myself via online tutorials.
I'm not as crafty as I'd like to be, hopefully someday I will be!

know how to read music so that I could look and just know what sound should be coming out of my mouth. I can sing - but only after I've HEARD it.

play a musical instrument like piano, violin or guitar.
Macarons. I've tried at least 5 times. They taste fine but don't look great. Now I buy them from Costco. $10 for 32 (4 different flavours) and are so yummy. Saves me the time of baking them and making 4 different flavours.
Swim. Well I can swim but cannot float and to swim I need my feet to touch ground. I've been very scared of water since very young and I have a fear of drowning. Everytime we're in the car on a bridge or near a body of water, I fear we'll have an accident and the car would end up in the water, slowly sinking, with water pouring in. So I constantly think of ways for all of us to escape safely. I'll think of that until we're off the bridge.
I want to make sure my kids know how to swim and not scare of water so I've enrolled DS1 in swimming lessons since 2 yrs old and will do the same for DS2.
Fluent in Spanish or Mandarin. It's a shame that, having Chinese background, I was never taught the language.

Play guitar, my son is awesome on the guitar and I wish that I can play like him. Piano is my second one.........

computer skills!! I mean when it does not work, how to troubleshoot??
also if someone could surgically implant a " sense of direction" into my brain that would make me so happy!! I do not understand N,S,E West directions and when people describe where something is and they say any of those 4 words I panic!!

I also wish I were more techie. I'm currently ready to throw the newish computer (borrowed from a neighbour trying to fix my not so old laptop) out the window cause Windows 8 keeps suggesting I use apps. Eeek!
Back in the good old days of my misspent youth, I used to hang out with a group of hackers (nice boys who would set up little challenges to each other, no taking down of FBI HQ with them ). They taught me how to strip a computer, replace and add hard drives, get them to talk to each other (this was the dark ages, before anyone knew what wifi was) and reinstall programs when they went wonky. They even had me writing code, although that was never my thing. Good thing my parents never questioned why their 24 yr old daughter was hanging out with a half dozen teenage boys.

I've always thought it would be fun to learn...
1. how to knit. I did try crochet but alas, I seem to have THE most bumbling set of hands ever.
2. How to be more handy and operate basic tools. I can't put a screw in the drywall without mucking it up and I could never run stuff like a power saw or anything. I've always wanted to be able to build things. But sadly, I haven't got a clue. Maybe I could attend a grade 9 carpentry class. Lol
Like Patty, I also think it would be wonderful to have a great singing voice. I think it's such a gift.
