Thread: How do you make pork shanks???

We were given 6 packages of 5 pork shanks but i have no idea on how to make them. I googled pork shanks but i would prefer a tried and true recipe from the members here. So if anyone has pork shanks recipes they would share, i would love to have them and would greatly appreciate the recipes. I dont want to throw them out and waste them.

Simplest way is to boil them - I use a dutch oven, usually three medium pieces at a time, add salt, peppercorns, bay leaves. Cook about two hours, depends upon the size of the pieces - it needs to be fork-tender.
Some people add veggies right to the pot partway through cooking, but I don't like doing that. I find the cooking water is too greasy.
I just remove the shanks once cooked and separate the meat (husband likes the fat, not me).
I like it served with mashed potatoes and sauerkraut sauteed with onions, and cookied veggies like carrots and/or peas.
You can also use the cooked meat in other recipes - it's just a denser type of shredded pork.

season with course salt and pepper
sear in pan until brown
remove from pan and add garlic, carrot, celery and onion
fry and add pork
pour beef broth
add tomatoes
cook for 3 hours or until tender

I made the pork shanks a la Natalka yesterday for dinner. I didnt use a bay leaf because of a bad experience years ago but i did add lots of garlic and peppercorns and salt. I boiled everything for 2 hours and the pork meat just fell off the bone, not much fat either which i peeled off the meat. The pork shanks tasted just like a roast pork. Next time i will try them a la frugal50!

i roasted mine in the oven with a glaze of beer,haven't made these in 20 yrs was my DH flavorite

^ My husband's too, but they used to be cheap like borscht - not anymore, that's for sure.

I did according to the online menu, I think it tasted good.
Place the pork shank in the oven. Allow it to brown on all sides.Use a pair of cooking tongs to rotate the meat from one side to another. It will take between one and two minutes to brown each side of the pork shank.
Use the tongs to remove the pork shank from the oven. Carefully drain off the excess fat and return the pork to the oven, increasing the cooking temperature to medium-high.
Add water to oven -- as much as is needed to cover the pork shank. Add your seasonings, such as salt, pepper and bay leaf, to the oven. Allow the water to come to a full boil, and then decrease the cooking temperature to low.
Allow the pork shank to cook for 2 to 2 1/2 hours, or until the meat is tender. Use a fork to test the texture of the meat as it is cooking.
Add the desired vegetables, such as onions, celery and carrots. Use 1/2 cup of vegetables for every pound of pork shank. Allow the shank and vegetables to cook for another 25 minutes, or until the meat is very tender and the vegetables are fork-tender.Last edited by Lily369; Thu, Mar 26th, 2015 at 04:46 AM.
