After a few meh attempts at making caramel popcorn without corn syrup, I finally found this one!
I thought I'd post it here in case anyone else won't eat anything "corny"..
Non-Corn-Syrup Popcorn
4 tbsp butter
1 1/2C brown sugar (I had dark brown on hand)
1/3 C water
1 tbsp vanilla
1/2 tsp baking soda
3 quarts, or 12 cups of popcorn
Melt the butter, add all other ingredients except for baking soda and bring to soft-ball stage, 245F.
Remove from heat, stir in the baking soda and stir, being careful, since it does foam up.
Stir into popcorn, mix well and that's it!
It's a large quantity of popcorn, so I divided it into two bowls and added 1/2 the caramel to each of them.
The popcorn I made was the microwave kind, which was lightly salted. If you like salted caramel, add a tich of salt into the caramel.
I did divide the mixture onto two parchment lined baking sheets and baked them at about 250 for 10 minutes, but I don't think this is necessary. I place it into 2 large freezer bags.
For Christmas perhaps add in crushed candycanes, or chocolate chips, etc...enjoy!!I did this just now because our Grandson is visiting for the weekend while Mom and Dad are in Toronto for some R&R and I just spilled his bowl of 'bought' sweet 'n salty popcorn all over the floor.This thread is currently associated with: N/ALast edited by Lynn49; Sat, Nov 14th, 2015 at 02:00 PM.

MMMMMMmmmmmm oh caramel corn homemade is the best! Although, I have never used corn syrup to make mine, ( I cannot even remember the last time I had a bottle of that stuff in the cupboards ) wish I knew where my old recipe was. I am going to try your Lynn. sounds wonderful.

I've never tried Chicago Mix, but there is a recipe on line for it...where you make cheese popcorn using cheese-flavoured powder and butter. I'm not sure what's in fake cheese powder, but it's probably one of those wonderfully flavoured ingredients I'm not inclined to eat. Maybe there's another recipe that uses real cheese?
All I can attest to is that the caramel popcorn I made was SO good...the best I've ever tasted and without any fake flavours in it, like the bought stuff, and no corn syrup!

I need to find a good recipe for peanut butter pop corn. Weird maybe... but I love me some peanut butter!

Looks to me that if you cooked it a little further you would have a peanut brittle recipe. I would go classic, popcorn and peanuts.

Yes, after 235 degrees you start getting into hard crack, so it would be peanut-brittly...our Grandson is very allergic to nuts, so everything I make has to be de-nutted.

I also have a recipe for "White Trash"...unfortunate title, but "crack" was taken!! It's that addictive!
If anyone wants it, I'll look it up and post it...although I wonder if a 'search' for White Trash on here would uncover it...Anyway, simple, and it disappears in minutes; good thing it makes a lot and can keep for days. If you hide it on yourself!

Yum, haven't made that stuff for ages. I have a recipe for soft poppycock, though, that's how I like it. Most everyone else likes the crunchy stuff.
I use air-popped popcorn, though - can't stand all the chemicals in any microwave type.

I have all my ingredients good to go! I will be using Organic ( non GMO ) popcorn kernels and my air popper and cane sugar ( looks sort of like brown ). I was all set to start the other night but something distracted me.
