How do you cook sous vide in a giant container like that? Doesn't it have to be in a vacuum sealed-style bag?

Regarding the water evaporation/cooling problem with sousvide, find some relatively thin (~1/4") foam packing sheets you get from stuff from ikea furniture, trace the outline of the container you're sousviding with (leave the sousvide attached to get the outline of that), cut and drop it on top of the water during cooking. make different versions for different container sizes. stack multiple sheets for more insulation. Doesn't need to be perfect.
