I have meatballs and frozen spaghetti sauce in the freezer so going to take that out and make spaghetti & meatballs, and slice up a baguette and toast in the oven with butter, garlic and mozza cheese, sprinkled with a little dried basil ...ohhh the carbs!

Last night we had chicken, mashed potatoes and peas.
Tonight we're having pork chops in the crock pot, roasted potatoes and some kind of veggie. Don't know what yet, though."Be yourself. Everyone else is already taken." Oscar Widle

I sure hope my experiment turns out. I have the peppers baking now, BUT I made them in a totally different way to use up leftovers and for a change.
Large red peppers halved lengthwise then filled with a softer/wetter than normal mixture of quinoa, chopped fresh herbs
( basil, dill, parsley ), minced onion, garlic, mushrooms ( gotta hide those mushrooms or DD won't eat it ), Classico 4 cheese white sauce, my homemade pasta sauce and mashed leftover baked rainbow trout fillets. The filling looked interesting and did smell kinda nice.
As I placed a scoop of filling into the bottom of each pepper I added 3 cooked shrimp, then a tad more filling on top, placed last shrimp on top to garnish each pepper, sprinkled fresh grated Parmesan over, filled pan with remaining sauce mixture to about 2/3 up the sides of the peppers.
This might just be my breakfast!! ha ha

Last night was Whopper Wednesday here - don't usually do two weeks in a row, but that's just how it worked out.
