    Time for a change from Easter foods (even though we still have some left), but husband forgot to thaw a chicken to roast, so we had M&M jumbo crispy wings (awesome!), I made roasted potatoes, and an assorted veggie salad.

    did up a fresh batch of chicken soup ( threw in some of my own GF spaghetti broken into small bits ), stuffed another batch of bell peppers, Mmm and prepared/steamed some more " clean " veggies ( cabbage, snow peas, carrots ), so NO excuses to be reaching for anything unhealthy.

    Wings sound good!! I have small tray in the freezer, so if I take them out now they'll defrost by dinner....will do them in a dry rub of spices ( S & P, garlic powder, paprika, smidgeon of cayenne, etc) toss on the bbq and finish with Diana Rib & Chicken...will either have with it a garden salad or veggie packet.

    Husband had a huge lunch (good for him, I'm not complaining, he hasn't been eating much lately), so he won't eat at regular supper time, so he said he'll just find something later.
    So I'm having two hard-boiled eggs and toast, will make a salad later.

    Added - so who body-snatched my husband?
    I go into the kitchen, he announces, "I'm having peanut butter!"
    Well, good for you, lol.
    "And I'm making toast" - well at that point, I knew something was amiss, he doesn't like/rarely eats toast - he's a bread dude, even with breakfast foods.
    "And I'm having jam" - well, I could have fainted at that point. He must have seen my face, and said he just felt like something totally different than any foods he's been eating.

    Why does this matter? Because whenever I have PB and jam on toast, he goes ICK!

    Home made hamburgers, M&C, Mann's sugar snap peas, a glass of milk, and fresh fudge brownies for dessert.

    DH and 3 of his friends just left on a road trip. They are going to Comic Con in Calgary until Sunday. Just LO and I for the next four days. Good thing I have some leftovers because I am not sure what I will be cooking when it is just me and our 19month old son.

    thawed out some more fillets this morning, this time it's Alaskan Pollock. Now that will give the gang here plenty of choices. Still have to " push " those cooked veggies though, they seem to always reach for the main protein first.

    Have to say that my bbq wings turned out really good yesterday..I drizzled them with EVOO first and then added all the spices and kept a close eye on them and they turned out amazing..a little heat from the cayenne and then sweet from the Diana sauce....tonight it's taco night as I have all the fixings and its easy!!

    Weenies and beans casserole, in which I hid carrots, cabbage, and the white ends of green onions. Will serve with baby shell pasta and salad.

    I got some lovely green peppers on sale for .99 a pound, so bought several. I roasted one in the oven last night brushed with olive oil, until the skin got all blistered and a bit blackened. Did some onions too, and tomorrow I will put the onion, pepper pieces (blackened skin removed), a bit of goat cheese into chicken thighs kind of folded in half, coat with Italian bread crumbs. I've done similar before with mozzarella cheese, is very yummy. DS will have his plain.

    Was going to do it tonight, but had a 'I don't feel like cooking night' and we had pizza.

    I had a friend over for supper tonight. She made a salad. I made a chicken and mushroom sauce with cream cheese and feticchini noodles. Had it with a glass of milk and left over brownies from yesterday. I just ran some over to my neighbour, but no one was home...so I left the container in her mailbox. She'll know it's from me because I told her yesterday that I had baked them.

    Today is one of the very few Fridays we are allowed to have meat, since it's the week of Easter.
    I'll be doing sirloin steaks on the grill pan, we'll have baked potatoes, and I'll have corn.
