  1. I personally LOVED them and will be doing more soon. I just picked up white corn tortillas and cheap refried beans and green chilis from across the border last night. They have such better selection and prices for mexican! So it's gonna be taco night here soon! My FAVORITE!

    For the potluck I did the spiraled zucchini, cherry tomatoes, feta, greek dressing, real bacon crumbles and then the pickled onions and it was a huge hit. I got many compliments. I just kinda wung it but will definitely be reproducing it again.

    Thank you for the pickled onion info! I am going to try these the next time I make anything they could go with, which i am thinking is endless! Tacos I think will be the first to try.

  5. They are super easy. 1 medium red onion in thinly sliced. 3/4 cup vineagar ( I used rice vinegar but any will do) 1/2 teaspoon sugar 1/2 teaspoon salt. Let sit for min 30 min but they taste better with time. You can add flavouring like peppercorns, garlic or chilies but I like it simple. Store in a glass jar so that the vineagar doesn't react with metal bowls and stuff.
