I make apple pies and freeze them, I cook some and leave some raw, they make a handy treat when unexpected company shows up.
Canned apples and apple sauce. Pies, apple crisp, baked apples (can be done quickly in the microwave).

I'm not an artificial sugar kind of gal, but the Readers Digest this month has some apple recipes that lookgood. One is kind of an upside down apple cake or pie, I forget which, gonna try that for sure! We picked apples a couple weeks ago, time to get some of them into recipes and/or frozen.

well, this is more of a breakfast food. You make regular oatmeal, cut and peel an apple, add some cinnimon, some craisons, and cook them as you are making the oat meal. it is really good and pretty healthy..
I love these suggestions. Keep em coming. The kids love one recipe I make:
Eat with pork chops and have creamed corn on the side.
Chop apples in medium size pieces (pie size)
Grease baking dish. Add apples. Season with cinnamin, cloves, raisins and drizzle honey overtop with a littlebit of butter - sprinkle with brown sugar - splash of vanilla (or extract). Lots and lots of cinnamin. They say it is like apple pie without the crust - and makes a great side dish (instead of applesauce). Not the healthiest but very tasty.
Really you could also use pears in this recipe - mix and match with whatever is in the cupboard.

This recipe looks long, but it's not hard.
Apple Streusel Cheesecake (make day before you want to serve)
Preheat oven 350 degrees.
Crust: 1/2 cup softened butter
1/3 cup sugar
1 cup flour
Cream butter and sugar together, blend in flour. Press onto bottom and 1/2 inch up the side of a greased 9" springform pan. Bake 12 to 15 minutes til light golden. (it will bake more later with filling)
Filling: three apples (I use Macs or Spartans)
1/4 cup sugar
2 Tablespoons butter
2 Tablespoons milk or cream
Peel and core apples, cut into 1/3" slices. In a frying pan, melt the butter and sugar, add apple slices. Cook the apples for three to five minutes until they are tender and getting light brown. Add the milk, and cook another five minutes.
Set aside to cool.
1 package (brick) Philly cream cheese, softened
1/2 cup brown sugar
2 eggs
1 cup sour cream
2 Tablespoons lemon juice
Beat cream cheese with sugar, add eggs one at a time. Then beat in sour cream and lemon juice.
Using a slotted spoon, put the apples onto the crust, cover with cheese mixture.
Steusel topping: 1/2 cup flour
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/4 cup softened butter
Mix til crumbly (I use a pastry blender). Sprinkle on top of filling.
Bake 45 minutes til centre is set. I turn off the oven and leave it in a while longer (sheesh, I never have written down how long.... 10 min maybe; always worried so cheesecake isn't runny... ?sorry)
Cool at room temperature, then chill overnight.
To serve, release springform side, slice and enjoy! :love2:
My favourite apple snack is:
Peel and slice 1 or 2 apples. Put them in a bowl and add lots of cinnamon, a tiny dab of butter, and a sprinkle of brown sugar. Put in the microwave for 1 and a half minutes. Enjoy.

My Mom always sewed aprons and baked apple-squares for the teas our church held from time to time...people always waited for the apple squares to arrive, and they always sold out immediately! And for more money per square than any other dessert there.......
Our kids loved them growing up when I made them and still do...if anyone wants this recipe please let me know here.....I warn you, however....it's not a diet-dessert! But SO easy!!

We're going apple picking again for Thanksgiving. It's a tradition we started last year, my brother comes from California once a year, so we all go out apple picking! :) Sounds like it could be a good Thanksgiving dessert!

Stella's Famous Apple Squares
Dough:
1C oil
3/4C white sugar
2t vanilla
2 eggs
2T baking powder
3C flour
Mix the 'wet' ingredients in a measuring cup (start with the 1C oil), and stir together well. Add to dry ingredients in a bowl. Mix and divide in half.
Pat half the dough into an 8x11 cake pan.
Filling:
5 McIntosh apples, cored, peeled
1/2C sugar
2t cinnamon
1/2 Lemon: juice it, and add grated rind
1/2C (approx) strawberry jam (I've also used seedless raspberry jam)
Using a coarse grater, grate the apples over the dough base.
If you don't have a coarse grater, slice thinly and spread over dough. Don't be neat...messiness just adds to the texture! Sprinkle with remaining filling ingredients except the jam.
Then GRATE the remaining dough over the apples.
Now. This requires a coarse grater (mine has openings approx 1/2" wide).
If you don't have this, just peel off bits the size of flat almonds and toss over the apples, covering them completely. This creates a lumpy topping that gets deliciously crunchy when baked, so don't pat anything down..it should all sit on top loosely.
Over this, plop bits of jam so that it's fairly evenly distributed over the dough topping.
Bake @ 350 for approx 1 hour. Check after 45 minutes, as oven temps vary, but it should be a medium brown on top...not pale like a pie.
Remove from oven, and let sit until you can't stand it any longer, and enjoy!!
This keeps very well, and can be frozen ahead of time, prior to baking, then baked from frozen. I've never been able to accomplish that, but I've heard it is possible. :cheesygrin:

I freeze apples for apple pie etc. over the winter.With the peels and cores I make apple jelly and I have 2 pints jelling on the table right now. Best yet the apples were free! You can also make apple syrup that is great on pancakes and ice cream.
Whoa! You make jelly with the peels and cores? Now that's the first time I've heard of that. I make jelly from different wines, but goodness....if I ever have a pile of cores and peels I'd certainly be interested in making it!

I made regular apple crisp last night (Betty Crocker cookbook) and it is almost gone! Yummo. I decided desert should not be low calorie so made with real brown sugar and real butter. I like the look of that apple square recipe too. May have to try that one out!
