hmm I do not have are recipe but I make them often.....I just grate potatoes and a small onion, stir in an egg, salt and pepper, and a bit of flour of thicken it then fry like you would a regular pancake....hope that helps!

Here's a quick one for you.
POTATO PANCAKES
3 raw potatoes (grated)
1 tsp. onion (grated)
1 tsp. salt
2 eggs, unbeaten
2 tbsp. flour
Bake like other pancakes on hot greased skillet. Spread a little and bake until golden brown. Good with applesauce.

Yeah, my mom and dad used to make potato pancakes all the time, I have had them with apple sauce and sour cream.
