Olive oil isn't very good for fish & chips because it will light on fire easily (low combustion point). Fish and chips needs to cook at a high temp to get it crispy. Canola is better for frying. But if you are tossing in olive oil and cooking in oven, it should work very well.

Yes, I've lit my kitchen on fire a few times...have a couple scars on my stomach from frying fish (don't do it wearing underwear only) and had the oven door fly open once when an eggplant exploded...I went over to my girlfriends house because I was sure my kitchen was out to kill me that week.

bahahaha. You guys make me laugh. Yes, apron and hat. Even that over underwear would have helped. Good thing I actually had underwear on, otherwise the burns would have been much worse.
