    Cowboy Cookies
    ---------------

    1 cup margarine
    1 cup white sugar
    1 cup brown sugar
    2 eggs
    1 t vanilla
    2 c rolled oats
    1 1/2 c flour
    1 t baking soda
    1/2 t baking powder
    1/2 t salt

    1 cup chocolate chips
    1/2 cup chopped walnuts
    (can add 1/4 cup coconut)

Cream together shortening and sugar. Add eggs and beat til fluffy. Add vanilla and dry ingredients. Fold in chocolate chips, nuts and coconut.

Oven at 350 degrees. These spread quite a bit, so space well by heaping tsps.
Bake about 10-15 minutes (depending on size of cookies) til edges are just browned. Leave on cookie sheet two minutes, then remove to cool. They firm up a bit on cooling, so I like them just getting browned, then when they are cool they are both crispy and chewy.
    ---------
I forget the amount they make, but it's many dozens!
But don't expect them to last long - they are amazing!

    Secret Recipe Chocolate Chip Cookies

    Mix together:
    1 cup butter or margarine
    3/4 cup brown sugar
    3/4 cup white sugar
    2 eggs
    2 tsp vanilla
    1 tblsp lemon juice

    In seperate bowl combine:
    2 1/4 cups flour
    1/2 cup oats
    1/2 tsp salt
    1/2 tsp cinnamon
    1 1/4 tsp baking soda

Chocolate Chips - as much as you like
    nuts - optional

    Preheat oven to 350'.
Add dry ingredients to wet ingedients. Then add the chocolate chips & nuts. Put in fridge for about 10 min. So butter hardens a little, otherwise cookies will spread out too much while baking.
Bake JUST untill lightly browned, they may still be slightly puffed.
*lemon juice is the secret ingredient. It activates the baking soda to make the cookies softer.

one day it will happen i hope iy would make life a bit easier and it only makes sense
so there are two version of making the sweet roses ill post both and then you guys can make which ever one that suites your taste buds more

    1st version of sweet roses
    1 egg
    100mL yogurt
    100 mL sugar
    100mL semolina
    100mL Olive Oil
lemon zest this is optional i personally dont add lemon zest
    8g baking powder
    8g vanilla powder
add in enough flour for it to become a dough

for the simple syrup you need 3 cups of sugar and 3 cups of water add in 1/4 of a lemon with the juice make this before you start the dough so it can cool down by the time you use it

now if the dough is going to be a whitish cream color what i did was take half of it and added coco thats how i got the brown and white effect sometimes ill add red food coloring and you get pinkish roses or you can leave them white

    directions
    1. mix everything except for the baking powder and flour
    2. add in a bit of flour then baking powder
    3. add in enough flour until your dough mixture feels like you ear lobe i know this sounds weird but it works like a charm :D
    4. once you have your dough ready you can divide the dough into pieces add coloring coco or whatever your heart desires
    5. roll out your dough until its 3-4 mm thick then take a small circle cookie cutter i used the top of a turkish tea cup and cut out a bunch of circles
    6. take 5-6 circles and overlap them then roll them starting from the very first circle
(this part is hard to explain here are some pics hope they help cause im really bad at giving recipes)
    7. then you bake them for 20-25 min at 350C or until the white parts start to turn a bit brown
    8. add the simple syrup just make sure one of the two is cold see i didn't know that if you add hot simple syrup to hot cookies it turns them into something mushy dont make the mistake i did wait till your simple syrup is nice and cool

then you cut them in half and you get two roses

if you have any questions you can definitely ask me i know i know im horrible at giving recipes but ill be more then happy to help

ill come back to give the other version DH is waiting for me at the door :D

    FINNISH GINGER SNAPS

These are thin, crisp, spicy cookies that are a favorite around Christmas time. They keep well when stored in an airtight container.

1/2 cup light molasses or dark corn syrup
    1 tablespoon ginger
    1/2 cup dark brown sugar
    1 tablespoon cinnamon
    1/2 cup soft butter
    3--3&1/2 cups white flour
    1/2 cup heavy cream
    1 teaspoon baking powder
    1/2 teaspoon salt

In the bowl of your electric mixer, beat together the syrup, brown sugar, and butter until mixture is smooth. Add the cream, ginger, cinnamon, flour, baking powder, and salt, and continue mixing until the dough is stiff. Chill for several hours.
Roll out small portions of the dough to 1/4 inch thickness, and cut into *3 inch rounds. Bake in a moderately hot oven (375) for about 8 minutes. Do Not Overbrown. Makes about 60 cookies. *Can use any cookie cutters
