made 6 baked apples this morning. Cut off the top of apples, core the apples, sprinkle in the apples a mixture of sugar and cinnamon, put in an aluminum pie plate and as a last touch i poured some Maple Syrup on top. Bake at 350F for approximately 30 minutes. Yum Yum!

The other night I had a hankerin' for muffins, so I found a recipe for oatmeal muffins. Not great, but OK.
This isn't exactly baking, but last night I had seen this recipe and had to try it. OH my, so good! Cinnamon roll pancakes!

I didn't do the cream cheese glaze, figured they'd be rich enough without, and they were. The first few, I think I heated the butter too much so they were messy looking, but the last few the cinnamon stuff was cooled and thicker, so it gave me better control and they looked more like cinnamon rollls (although all were delicious).

I bought 2 bags of discount bananas at NF last week. They are finally starting to get a little over ripe, so I plan on baking with them today since I am not working. We are leaving tomorrow night and won't be back until Sunday. So I'm thinking banana chocolate chip muffins and banana oatmeal chocolate chip cookies. LO and I like both types. Dh thinks they are ok.

I must ask, what is Hamantaschen? Looks like a cookie with jam in it? Very pretty! Looks like a butter cookie, but can't be vegan with butter.

Tonight I made some Buttermilk biscuits to use up the litre of buttermilk. I think we'll have strawberry shortcake tomorrow with them.

The non-vegan versions are very much like butter cookies with jam (or other fillings)!

Bran muffins! This is a recipe of my Mom's (who passed away a little over a year and a half ago, so glad I got this recipe from her!). It's a big recipe, makes about four dozen muffins, uses All Bran and Bran Flakes as well as whole wheat flour and buttermilk. You make the batter and keep it in the fridge and bake as you need.
It's amazing how powerful your sense of smell is to bring back memories. My Mom made this recipe a lot over the years. It's been awhile since I've made it, but even scent of the batter earlier today was enough to make me think of Mom. I have muffins in the oven now, the smell of those even more so.
