I made these Oat, Apple & Raisin Muffins earlier today. The recipe comes from the Gooseberry Patch Family Favorites recipes booklet, but im including it here. They are really good!
OAT, APPLE & RAISIN MUFFINS
1 cup Sun-Maid Natural Raisins or Sun-Maid Zante Currants
1 cup apple, cored, peeled and chopped
1 egg
1/4 cup oïl
3/4 cup milk
1/3 cup sugar
1 cup all purpose flour
1 cup quick-cooking oats, uncooked
2 tsps baking powder
1/2 tsp salt
1 tsp nutmeg
2 tsps cinnamon
1/4 tsp allspice
2tbsps Brown sugar, packed
Combine raisins or currants with apple, egg, oïl, milk and sugar in a medium mixing bowl. Stir together flour, oats, baking power, salt, nutmet, sinnamon and allspice in a separate bowl. Stir into raisin mixture just until combined.
Divide batter equally into 12 greased or lined muffin cups. Sprinkle tops of batter with 1/2 tsp Brown sugar. Bake at 400 F degrees for 20 minutes or until golden. Makes one dozen.
I have had a box of red lobster biscuits sitting in the cupboard for a while now, finally made them. Pretty good!
Little cup cakes for kids. Making muffins tomorrow.

My bananas have been going bad really quickly lately, so last night it was two dozen banana chocolate chip muffins.
Just popped some morning glory muffins in the oven.

I baked what was called a Cinnamon Bun Cake - but, no, it wasn't, lol!
However, it was a very good cake, just not the right name for it.
