My grandma died on May 31 with my dad at her side. Grandma loved to bake, my mom still uses grandma's bread recipe 29yrs after my parents separated. I baked that afternoon in Grandma's honour. I experimented and enjoyed telling my dad about it, Dad loves experimenting in the kitchen. I baked oatmeal chocolate chip cookie dough in two pie crusts, I squished them down when mostly baked and then finished them off. Next time I will put tinfoil over the sides of the crust before finishing baking the crust. I then filled these cookie crusts with cheesecake batter. I baked the rest of the dough as cookies for my children. I sent one of the cheesecake pies to work with Dh the next day, along with a container of strawberry sauce. Everything was a hit.

I had emergency surgery on June 5, so I am very limited while I am still healing. I bought two brownie mixes, to find out which one I like better. The kids and I baked a box of brownies last week. I'm planning on baking a small peach crisp soon, and the other box of brownies.

Picked a humongous size zucchini from out back, not even sure how I missed that one growing like mad while the others stayed small to average sized.
Anyways, I grated about 2 cups worth off of it ( mostly the green skin part, less of the white insides ) to make 12 muffins.
Oh boy.....these were made regular ingredients ( not gluten free ) and I used ACTUAL sugar ( ha ha )
Also tossed in some crushed pecans and dried cranberries.
The family will love 'em, they smelled just heavenly coming out of the oven.

very curious @Tweets77 did you buy those tiny actual key limes to make it? I bought a bag once thinking I might make key lime pie with them but they were so darn small, I ended up just slicing them up into a pitcher of water.

We have been in a drought for the last month and typically have a daily high of 30C. We have central air, but I'm still limiting our use of the oven. Last Sunday we baked a pan of healthier monster cookie squares.
Our twins are turning 2yrs old tomorrow. Our son and I have plans to bake today. We want to bake cupcakes and a loaf of banana bread. Might also bake a meal while we're at it.
edit: We baked these cupcakes this morning. I think I'll freeze some bananas and bake with them in a few days. We are finally being forecast tempts in the low 20s for a couple of days.Last edited by Angela273; Mon, Jul 31st, 2017 at 12:42 PM.
