Banana chip muffins
2 cups flour
½ cup packed brown sugar
2 ½ tsp baking powder
½ tsp salt
1 cup semi-sweet chocolate chips
1 egg
1 cup mashed fully ripe bananas (about
3)
1/3 cup milk
½ cup oil
heat oven to 375f.
Combine first 4 ingredients in large
bowl; stir in chocolate chips. Whish
remaining ingredients in separate bowl
until blended. Add to flour
mixture; stir just until blended.
(batter will be lumpy)
spoon into 12 muffin pan cups sprayed
witn cooking spray or line with paper baking cups. Bake 22 minutes
or until lightly browned. Cool in pan 10 minutes. Remove and let
cool completely.

We went apple picking the other day; picked about 30 lbs of apples (McIntosh, Delicious, Honey Crisp, Blondie, and Shamrock). We always pick at the same place which the the Abby Cistercian (i think thats how you spell it). Then we stopped in at their store and bought some Honeycomb, Honey lozenges (for sore throats during winter), creamy honey and a couple of jars of regular honey. And yesterday i made an Apple Pie with Cinnamon using McIntosh apples.

A loaf of no-knead cheese bread with 20% whole wheat flour and 10% grated cheddar (50 gm to 500 gm of flour), baked as a free-standing loaf.

The goal is to live day by day not to much thinking hahaha !!!!

a single large loaf of banana bread! Mmmm smells heavenly in here now.
Easiest recipe ever! Just 5 ingredients.
Mix together
1 cup mashed banana
1 cup Miracle Whip
In separate bowl mix together
2 cups AP flour
3/4 cup brown sugar
2 tsp. baking soda
Pour into loaf pan, bake at 350 degrees for 45-55 minutes, let cool 10 minutes.

A crusty boule with 20% whole wheat and cheddar cheese as well as well as a crusty Vienna-shaped loaf, also with 20% whole wheat but with cheddar and poppy seeds, both for a family gathering this past weekend.

yesterday i made Nestle Tollhouse Cookies (choco chip cookies); and Pompochkys (Ukrainian name for some cookie balls). Today i made old fashioned Peanut Butter Cookies. Last week i made Shortbread and Sugar Cookies (made with oïl instead of butter).
Baking all this for the Christmas season. Everything i bake can be frozen, which is good because i start so early.

Sugar drop cookies with oil
preheat oven to 375f degrees
sift together :
2 ½ cups sifted all purpose flour
1 ½ tsps baking powder
¾ tsp salt
1 tsp cinnamon or ¼ tsp nutmeg
combine :
1 cup sugar
¾ cup vegetable oil (i use mazola oil)
add to this mixture and beat well after
each addition :
2 eggs
1 tsp vanilla
add the flour mixture all at once and
beat well. Shape the dough into half inch balls. Dip the balls in
sugar. Flatten with bottom of glass dipped in flour. Bake about
10-12 minutes or until golden.

POMPOCHKY (RUM BALLS)
4 EGGS
½ CUP WHITE SUGAR
1 CUP MARGARINE
2 TSPS RUM EXTRACT
1 CUP RAISINS
1 CUP CHOCOLATE CHIPS
1 CUP CHOPPED WALNUTS
2 CUPS CHOPPED DATES
1 TSP CINNAMON
3 CUPS FLOUR
1 TSP BAKING SODA
1 TSP BAKING POWDER
ADD TOGETHER : EGGS, SUGAR,
MARGARINE AND RUM EXTRACT. MIX THESE INGREDIENTS WELL.
ADD ALL THE REST OF THE INGREDIENTS TO
THE ABOVE MIXTURE AND MIX WELL. ROLL INTO SMALL BALLS (APPROXIMATELY
1 INCH BUT NO BIGGER). PLACE ON UNGREASED COOKIE SHEET AND BAKE AT
350 f FOR 12-15 MINUTES OR UNTIL GOLDEN BROWN.

SHORTBREAD
½ cup corn starch
½ cup icing sugar
1 cup sifted flour
¾ cup butter or margarine
Sift corn starch, icing
sugar and flour together. Blend in butter with spoon, mixing until
a soft smooth dough forms.
Shape dough into 1 inch balls. Place about ½ inches apart on an
ungreased cookie sheet; flatten with a lightly floured fork (or
flatten in the palm of your hand). Red or green glazed cherries, cut
in half. Place cherries on top of cookies and bake in 300F oven for
20-25 minutes or until edges are lightly browned. Makes about 3
dozen.
