    I've baked donuts 8 or 9 times in the last weeks after Christmas. My husband gave me a donut maker, I chose it myself, but he bought it. Even though I already knew about the gift, but I was damn pleased to receive it. I chose the VonShef 12 Mini Donut Electric Maker, found its description here and it was immediately love at first sight.

    Yesterday i made Mincemeat Tarts, 10 of them. This morning i made Zucchini Spice Cake. Recipe will follow. I know i said i would bake for a while but the urge was there, plus i had Zucchini i had to use up.

    Here is the Zucchini Cake recipe. You dont have to peel the zucchini but i do because to me the green peel looks like mold and the kids would never eat the muffins. Therefore i peel.

    ZUCCHINI CAKE

    I cup white sugar
    1 cup brown sugar
    2 1/2 cups flour
    2 tsps baking soda
    1 tsp baking powder
    1 tsp salt
    1 tbsp cinnamon
    1 tsp ginger
    1/2 tsp ground cloves
    1 cup oil (i use Mazola)
    1 tbsp vanilla extract
    3 eggs
    2 cups grated zucchini
    1 cup raisins (optional)
    1 cups chopped nuts (optional)
    2 tbsps grated orange rind


    Grease 9 x 13 inch cake pan. Prehead oven to 350F.

    In large mixing bowl, combine sugars, flour, baking soda, baking powder, salt, cinnamon, ginger and cloves. Stir to mix.

    Make a well in center and add oil, vanilla and eggs. Beat until blended and then stir in zucchini, raisins, nuts and orange rind.

    Pour batter into pan and bake at 350F for 45-50 minutes or until cake springs back.

    BLUEBERRY ORANGE MUFFINS (super good)

    1 3/4 cups flour
    2/3 cup packed brown sugar
    1 tbsp baking powder
    1 tbsp grated orange rind
    1 cup milk
    2 eggs
    3 tbsp butter, melted
    1 tsp vanilla extrace
    1 cup blueberries (if frozen do not thaw)

    In a bowl, sgir together flour, sugar, baking powder and orange rind. Whisk milk, eggs, butter and vanilla; stir into flour mixture just until blended. Fold in blueberries.

    Spoon into lightly greased muffin tins or muffin cups, filling 3/4 full. Bake in 400F oven 20-25 minutes or until golden and firm to the touch. Makes 12 muffins.

    The baked apples taste exactly like apple pie with cinnamon but without the crust. Very good on a cold stormy day!

    Mmmmm, I missed seeing those baked apples when you posted them @SnowFlakey , mouth watering for sure.
    I'm shoving these 3 pizzas in the oven soon. I cheated using 2 balls of Sobeys pre-made pizza dough, but all the other work was mine. Fighting with my rolling pin to make the circles stay!! Grating cheese, dicing veg....oh the humanity!!
    I'll enjoy mine watching the Puppy Bowl....the guys will have theirs later probably.

    Made Peanut Butter Cookies yesterday to use up some Peanut Butter Mom bought but does not like. They are super easy, no flour but use Oats instead.

    It is funny, I love these cookies but rarely think to make them and they are so easy, it is done in a mixer and hardest part is mixing the peanut butter with sugar until fluffy and they only take 8 minutes to bake. I should start making them more often.

    Baked 4 more applies yesterday. I have more apples that need to be used up but i dont feel like making apple pies, or croustades, or stuff like that.
