Well I finally got around to baking yesterday. It's been awhile.
I made 2 loaves of our fav white bread and 4 mini banana breads
We're not turning on the heat yet so I may need to bake more to keep warm

I baked up a bunch of bran muffins yesterday for us, my brother, parents and a neighbor. I've been using this old Quaker bran recipe for years. My brother had asked for carrot bran muffins so I dis some experimenting.
I made some plain
Some with carrot
Some with carrot and seeds
Some with raisins, carrots and seeds.
Adding the shredded carrot made them taste pretty good. I think I'll use 2 carrots for one batch next time.

@crafter this kind of inspired me now since lately NF has not had any of the Bran muffins. I've always bought DH his favourite Raisin Bran muffins there in the past but now it's all carrot, morning glory and lemon cranberree..wtf? The letter " after x " is coming up as an r .

lol I hear you on the key board keys not working. We had to reset all of our passwords with our last laptop...the symbol that we used wasn't working on the keyboard lol.
Oh yeah definitely recommend making homemade muffins. They are super easy and tasty to make. I buy the Rogers wheat bran now, I preferred Quaker bran but they don't make it anymore. Let me know how they turn out!30 295.60 52.80

ha ha @crafter I did the basic " turn it off and on again " and when the computer booted up again, thank goodness my keys were working properly. I was laughing my head off when it first malfunctioned because I am a 2 finger typist and though it was ME doing it.
Wheat Bran is on my next grocery list now.

I found 12 grain flour at Bulk barn and subbed in for 1 cup of white flour using my bread machine for the dough and then baking in the oven. I also used butter instead of margarine and really liked the outcome.

Meat filled puff pastry
Half have ground pork, saute onion and pork/chicken liver paste. The other half of the batch have ground pork, onion, woodsear mushroom, vermicelli noodles and egg.

just want to tell everyone a funny story
we used to have a bread machine and we used it less than 5 times. until one time, the dough was pretty hard that the machined kept turning and "skipping" a little bit as it turned and evenly it skipped off our kitchen table and onto the floor that was the last time we have a bread machine. It was a sign for us.

@crafter I baked up 12 of those bran muffins ( with raisins ) from your old recipe and they turned out so delicious. Both DS and DH said how they could really taste the molasses and the wheat bran. DS has often belly ached that most stroe bought muffins are actually cupcakes. Over sweetened, so these were a reminder of what a muffin should taste like.

This morning I made a Date cake.....way better than the date squares I usually make. Also a batch of coconut macaroons. Used up some things from my stockpile that've been there a while. Dates, raisins, coconut and sweetened condensed milk.

Does anyone have a nice moist mini chocolate chip muffins recipe? I tried quite a few that I found online that had good reviews but they were all OK. Of course I tried to follow the recipes as they were written.
I'm looking for a simple recipe that produces moist mini muffins for at least 1 week like the ones you can get at the Real Canadian Superstore etc. The mini muffins would go into the bento boxes for my kids for schools.
A simple recipe to me = no fancy ingredients. No sour cream or greek yogurt as we do not regular use those ingredients and I want to avoid buying them unless the recipe calls for the FULL container. We are bad with leftover.
I always have: AP flour, yeast, eggs, butter, salt, sugar, cornstarch, baking powder, baking soda, vanilla exact, chocolate chips,
