I am following a low carb, high protein eating plan, with sadly, no sugar :( so my baking may take a hit for a while until I figure out how to use substitutes. i have been reading so much on "sugar" & how the body reacts to its presence...wrecks all the good things in the oven! lol...
Thanksgiving is coming so I will be baking a pumpkin pie! I think we need recipes for the dreamiest pumpkin pie out there! I don't enjoy the really "pumpkin-y" tasting ones...so if anyone would like to share an old favorite, I'd like to give a couple a try before presenting my best on Thanksgiving!

But as I was putting it together I thought, that's a lot of sugar! I used a little more than half of what was called for and it's still a bit too sweet for me. I did use apples a little more tart than I usually buy, but still I would cut the sugar to at least half next time. I don't like things that are too sweet, e.g. I'm not a fudge eater. Adjust according to your taste :)

It was pretty tasty, altho' I forgot to make some of the mods suggested in the reviews. Definitely needs something on top, imo. I sprinkled with cinnamon sugar as a reviewer suggested. I used ricotta rather than cottage cheese because I had a container to use up. Tastes best out of the oven :)

On Wednesday I baked my oatmeal chocolate chip squares. We didn't have as many guests as expected that night...so I've been eating a lot more of these squares than I should. I didn't freeze any, partially because we are working on emptying the freezer some.

today I'm going to make confetti squares, peanut butter squares, a hubby asked I make a pan of squares for him to take to work for the guys....so whatever kind he requests
I made chicken pot pies. I made my own pie crust! And it didn't turn out like sheet metal, for the first time ever!

I kind of winged it on the filling, made a roux with chicken broth, some milk, and chicken of course, some carrots. They're in the oven now, I'm so excited it's pathetic.
I'm 40+ and have never been able to make decent pie crust. This one, I didn't have high hopes for it when I blended in the shortening, it was already coming together before I added the liquid. But I mixed it in and then put it in the fridge for half an hour. I even baked a bit of just crust before wasting my pie filling on it, to see if it actually worked, and it did! :)
Today was those Dr Seuss cookies that are floating around on Pintrest (neon swirly like sugar cookies)...they look very neat when done! Also, vanilla cupcakes with bubblegum icing.....my daughters choice! I dont think I like a cupcake that tastes like I'm swallowing a mouthful of bubblegum! Something isn't right about that! :blob9:
I have an apple pie and some turnovers in the oven now.. still 20 lbs of apples to go lol.
I cheated though, I have store bought crust.

Last thing i baked was a Banana Cake which i put in the freezer for a rainy day.
pumpkin pie and pumpkin muffins with the leftover pie filling. Hope they turned out okay. i had no idea what I was doing and just added some baking powder and flour until it looked like muffin batter! They didn't rise much at all so hopefully they aren't heavy :/
Made carrot cake, iced with vanilla buttercream and crushed walnuts. Ah, yummers!

I made Key Lime Pie, it was a little bit too rich for me but it was alright for a first try.

Earlier this week, I also tried apple oatmeal cookies. I used apple chunks instead of mincing it, as the recipe had stated, and it turned out to taste like apple crisp - but in cookie form!
We ate both within a few days.
Banana muffins, the full fat kind!!! My 'no sugar' days took a hit with this one!!
Chocolate Chip oatmeal cookies of course! I ran out of eggs, and substituted a Banana - they turned out great.

2 dozen chocolate cupcakes with real buttercream frosting & rainbow sprinkles...did this twice one month apart..I decided I need to clebrate my birthday twice! ;)..once on Sptember 26th & once on October 27th! :)
Wanted to bake butter pecan cupcakes but dumb me went out and bought the eggs I needed but forgot to check if I had enough muffin cups...I do not have enough so cupcakes are on hold until Tuesday night when I have the night off from class to work on an assignment.

I did a fair bit of baking yesterday in preparation for a 4 day road trip that starts tomorrow.
1 dozen baking powder biscuits
1 dozen baking powder biscuits with chopped roast ham and marble cheese
1 dozen hashbrown muffins (frozen hashbrowns, eggs, garlic powder, onion powderchopped marble cheese, and ham)
4 dozen molasses oatmeal chocolate chip cookies
I plan on making puffed wheat squares later today. I'm simply up right now because LO has decided to start his day. Dh is trying to get some sleep. :)
