Vegan lemon squares! They look decent, but were a total fail in my opinion. :P
I guess somethings are better with eggs and butter!!
I got a GREAT deal on lemons though. 7 for a dollar! I picked up 14 giant ones. Mmm citrus!

I LOVE anything lemon or lime so these look fab! Good luck with altering the recipe! Let us know what's next :) I wish I had more time to bake & experiment....today was just too nice to spend in teh kitchen though...getting the last few rays of sunshine in whille dining on the deck!
Made some bran muffins for dh filled with blueberries and raspberries. I'm being hounded to start back into the bread routine. Heaven forbid anyone in my family (or extended family) have to go to the store and buy a loaf of bread, LOL! Hopefully I'll feel well enough by next week to start back on the bread regime :shrug:
Janetta, those lemon bars look amazing! Don't you just hate it when something looks so great, but tastes, well.....it hits the garbage. I can't count the number of times over the years since being diagnosed as a Celiac that I've thrown out wonderful looking gluten free baked goods that my dog would't even eat :lolsign:

88¢ boxed cake mix (Betty Crocker, funfetti) + a cake mix extender.
The frosting was half canned and half 'butter cream'- the entire cake is vegan friendly. :)
I baked it for my bf's dad's birthday and it was really good! Moist, flavourful and fun!

Cornbread muffins (from a mix) in my muffin top pan. Before that, banana bread (from scratch) that I added green tea powder to. It turned slightly green but didn't have the green tea taste I was looking for. Still yummy though - I wish I had a piece right now! :cheesygrin:

Last week I baked cookies for my loving daughter.
To think, this all started with three over ripe bananas...I made lemon yogurt loaf, chocolate zucchini bread and banana bread. I only put bananas in the banana bread, but I hate heating up the oven for one thing, and I had lots of lemons and zucchini in the fridge.
