i made pilsbury choc chip cookies last night.
boxed cupcakes with homemade butter cream icing a couple of days ago.
i'm so tempted to make more, and i really don't need to be consuming this stuff!

Got a few different cookbooks from three libraries over the long weekend, and made a Gingerbread Cupcake recipe that was very very tasty!
This morning I tried to whip up just one loaf pan of something called Strawberry Tea Bread, seemed all healthy and the like. I was just not comfortable using the full amount of powdered Stevia that they suggested, so I used less, and it was o.k. but it could have been sweeter. Whenever I replace the Splenda in recipes with Stevia I always use less and it works out fine.

Baking paskas today - one of the two Ukrainian Easter ritual breads I will make today and tomorrow, to be ready for the blessing of the Easter basket foods on Saturday. I will make Babkas tomorrow.
Paska is a rich, sweet (representing God's goodness) dough baked in a round shape (God has no beginning and no end), made with three braided pieces of dough (Holy Trinity). The decoration on the top is most often in the form of a cross (an "X" is for Christ, which is Xpuctoc in Ukrainian).

I just had a slice of the above, with butter (yup, once a year, lol!) - it's perfect, honestly.
I'm not an experienced bread baker - particularly with knowing when these puppies are done since they are baked in odd pans... no two are the same size.
So I'm very happy!
(now I have to restrain myself from eating many more slices!)

Am just tasting a slice from the first batch of Babkas - a different Easter bread than yesterday's Paska.
Baba is the Ukrainian word for grandmother; Babka is a diminutive form - meaning blessed mother.
It's a light yet rich bread, with raisins and a hint of citrus. It's baked in a cylinder shape.

Not really baking I suppose but the last yummy thing I made was sponge toffee (it's the crunchy part in the middle of a Crunchie chocolate bar for anyone who hasn't heard of it). I dipped half the batch in chocolate and left the other half plain. Delicious! (Photo is just from google....not my actual toffee)
