@cath007 thank you for posting that recipe! I have a partial tub of Greek yogurt that was coming close to the expiry date and had no idea what to use it for....I will now bake a batch of these carrot muffins, they sound so good. i am using just regular All purpose flour, usually there is no problem interchanging flours unless the recipe is very specific, like a gluten free flour.

Regular Five Roses flour should work just fine. Ive never bought these fancy flours, just the plain old Five Roses.

those muffin recipes look great. I just bought a bunch of carrots on the weekend so will be making some of those muffins this week.

Yesterday i made some Choco Chip Oatmeal muffins from the Quaker Muffin Mix. Had some Quaker Choco Chip cookie mix left over so threw that in with the muffin Mix. Came out great. Made 12 muffins and i only have 2 left. Son was over so i gave him some for his lunches.

@SnowFlakey those carrot muffins are so worth the effort. Next time though I am making 18 of them from the batter. I found the tins were overflowing. That crumble topping is the best part too!

this is the 2nd recipe of coffee buns; every time i try a new recipe i like to cut it down in half so i don't waste the ingredients if it does not turn out. Coffee buns are basically a bread bun with a thin crispy layer of coffee flavoured cookie; the outside shell crumbles when you break the bun apart and the inside is soft (mostly because there was a cube of butter inside before baking lol)
my piping technique is not very good because of my weak hands but it did not matter because the icing mixture melted and covered the buns in the oven
here are the before and after pictures

We celebrated SIL's b-day Saturday. my DD made a Ferraro Rocher Cake from the 5-15 Magazine. That cake was so delicious. She said it was so easy to make. I asked her for the recipe and when i get it i will post it here. the 5-15 magazine is 5 ingredients in 15 minutes or thereabouts. Very popular food magazine in QC.
