my daughters (5.5 yrs old and 2.5 yrs old) and I baked mini double chocolate muffins. Of course some chocolate chips ended up in their bellies instead of the muffins.

cath007 here is the recipe for Coffee Cake. It is a very old recipe that i got from this elderly lady when i was selling Tupperware over 30 years ago. It is very tastey. Enjoy!

    COFFEE CAKE (from Gladys Stones)

    1/4 CUP BUTTER (OR MARGARINE)
    1 CUP WHITE SUGAR
    2 EGGS
    1 1/2 CUPS FLOUR
    1 1/2 TSP BAKING POWDER
    1 CUP SOUR CREAM
    1 TSP BAKING SODA

    TOPPING:
    1/2 CUP BROWN SUGAR
    1 TSP CINNAMON
    CHOPPED WALNUTS (OPTIONAL)

MIX TOGETHER BUTTER AND SUGAR AND THE EGGS. THEN ADD THE FLOUR, BAKING POWDER, SOUR CREAM AND THE BAKING SODA. GREASE YOUR BAKING TIN (I USE A BUNDT PAN.) PUT HALF SPRINKLE HALF THE TOPPING ON THE BOTTOM OF THE BUNDT PAN. SPREAD REMAINDER OF BATTER IN THE BUNDT PAN. AND THEN SPRINKLE THE REMAINDER OF THE TOPPING ON TOP. BAKE AT 350F FOR 45 MINUTES OR UNTIL DONE.

Yesterday I made Banana Muffins as we had 3 bananas past their prime

Today, thank you pinterest I made a Pineapple Upside Down Cake, minus the Cherries as I do not have any. But I went in Pinterest to to get a recipe for something else and a pineapple upside down cake showed up in my feed and I got a craving. This is part of the reason I keep a bag of frozen Pineapple from Costco in my freezer.

Was craving something sweet so pulled a few Chocolate Chip Cookie Balls from the Freezer and put them in the oven. I love having Cookie Balls in the freezer that I can just bake off.

Whenever I make Chocolate Chip Cookies I bake half, freeze the other half

Well, i made some more applesauce but i burnt the bottom of the pot! So threw that batch out. Then i made another batch of applesauce and it came out fantastic. So im freezing that for cake and cookie recipies that call for applesauce. and i also made 3 apple pies, turned out great. So im freezing 2 of them. Apples are cheap right now; thats why im freezing the pies.

Looking great! I dont bake bread anymore; the same with Paskas and Babkas. My mom didnt have the Paska or Babka pans like today. She used cans of various sizes. I can still feel her hands on mine teaching me how to knead the bread. nice memories.

Yesterday my friend gave me 2 Apple Crumble Pies. She also bakes like crazy and since the kids have left and bakes and passes the stuff around. Anyway, we ate 1 Pie: half hubby and half me. The other one is in the freezer.

This morning was all about baking.

More bananas to use up so I made a batch of Banana Muffins

Had some Strawberries to use up that were a bit past cutting up and eating so made them into a Crustless Strawberry Pie

Lastly some Cornbread to go with the Ground Chicken and Sweet Potato Chili that is in the slow cooker

Had a ripe banana and 2 soon to be ripe yellow zucchinis. So i found an easy muffin recipe with chocolate chips in it. Topped the muffins with some quaker oats, brown sugar and cinnamon. I made 15 large muffins. Came out not too bad.
