personally, I see a lot of roasted beets in my future!
I peel them, then oven roast them for 40 minutes, slice some onions, add them to the pan, pour on some balsamic vinegar and roast for another 20-25 minutes or until everything's tender and glazed. yumm!!

Now, though, I'll have to check to see if I have any mason jars left for canning after the cheap tomatoes 3 weeks ago as you've got the idea of pickled beets into my head
