Me and my kids just love this!!!! Very simple and quick to make.
You will need:
One bag of MCAIN hashbrowns ( in the red bag) The best to use
One onion chopped
One can of cream of mushroom ( or any cream soup)
Half a container of sour cream
Alot of shredded cheese ( as lil or much as you want)
You throw all of that in a mixing bowl. Mix. Put in casserole dish or any pan. Bake at about 375 for hour and a half. Half way through give it a good stir and put more cheese on if you want. Let it rest a few minutes before serving.

Yay for "Funeral Potatoes", as they are often known!
I use any frozen hashbrowns, but they must be diced, not shredded. Let the potatoes thaw ahead of time.
I mix it all in the greased 9 X 13 pan, why dirty a bowl?
I package frozen diced hashbrowns (750g or 1kg)
1 can Campbell's cream of mushroom soup
1 cup sour cream
1 cup grated cheddar cheese (I've also used Cheez Whiz, and it's okay.)
1/2 cup margarine, melted
1/2 cup finely chopped onion
salt and pepper (I also add a few shakes garlic powder and dill)
Mix together well in baking pan.
In a bowl, mix together 2 cups crushed cornflakes with 2 T margarine, sprinkle over top of casserole.

We love it at our house too and call it potatoes Romanoff-great for company or a potluck-even good for vegetarians.

I make these all the time. Actually, you can use any cream soup just to mix it up a bit.

i use a different cream soup (usually cream chicken as I HATE mushrooms) and i throw in bacon bits
