Anyone ever froze a brick of cheese? I understand that you are able to but what I want to know is... does it thaw nicely or is it mushy? I have a bunch of coupons left that expire at the end of the month and I wonder if it is worth buying in bulk.

You probobly shouldn't have to freeze them, most of the best before dates on the cheese I got at NF are for August, However when you freeze cheese it is a little crumbly so I usually shred it and ziplock it in medium bags to freeze and use it for cooking. Great for casseroles and pizza etc.!! It works great.

I freeze cheese all the time, I haven't had any problems with it. We don't eat the large blocks fast enough, so when I get one of the huge blocks of cheese, I cut it in half, air steal them both - one goes in the fridge, the other in the freezer.

I've frozen cheese and it's fine to use in cooking....like lasagna...but not for eating alone.
