Got a whole bushel of bananas at Sammy Fruit for $3.99. Making another batch of dried banana chips. A whole tray makes about 2lbs dried. I still have a lot left over. I will cut them up to make banana "ice cream". It has no milk or dairy in it and it's fabulous. I will probably add some strawberries in one batch.

This is from the Forks Over Knives Book:

    Banana Ice Cream

This frozen dessert requires frozen bananas, which can also make a delicious addition to smoothies. When you have extra ripe bananas, peel them, break them into pieces and place them in a freezer bag and freeze for at least 1 day.

    6 frozen bananas
    1 Tablespoon of vanilla
½ cup soy or almond milk

Purees a few of the frozen banana pieces, about a teaspoon of the vanilla and a small amount of the milk in a food processor until smooth. Pour in a large bowl, and then repeat this step until all of the bananas are processed. Quickly stir the “ice cream” and serve at once.

    Variation:

    • Other frozen fruits may be added along with the frozen banana for additional flavour.
