Mornin' all, and thanks again to those hardy steadfast souls who help us out daily with codes, you guys rock!!!
....OK, just about ready for Friday here.....a couple of gift cards to assign names to, and a couple of surprise CD's and DVD's to wrap....yeehaw!!!
....any of you want to try the best Christmas dessert on the planet?... it's great, cos A) you can use a purchased angel cake, so you don't have to have the oven on ( great for summer )
B) it's red and white, so it can be good for a Valentine's Day dessert as well
C) because it's an angel cake, it's light enough to have after a big ole turkey dinner....here it is:

...gawd, hit the wrong button...aaarghh!!....sorry bout that....DUH!!
RASPBERRY CAKE
3/4 c icing sugar
500 ml whipping cream
1 purchased angel cake
1 15 oz ( in a tub) frozen raspberries)
1/4 c syrup from raspberries
1 envelope unflavoured gelatin
Sift icing sugar. Thaw and drain raspberries, SAVE SYRUP. Dissolve gelatin in the 1/4 c syrup in a pan over low heat, cool till it's just warm.
Beat cream till it thickens, add gelatin, beat till almost stiff. Gradually beat in sifted icing sugar in 3-4 additions, fold in drained raspberries.
Slice angel cake in 4 horizontal layers, ( easiest with an electric knife), rebuild it using cream filling between layers, and spread the remaining filling inside and all around the outside. Chill for 4 hours before serving.
....a hint about the cream....use a glass/Pyrex bowl, and put the bowl and beaters in the freezer for about 10 minutes..... pretty much guaranteed to get the cream to whip up properly ( as compared to meringue, which needs room-temp egg white for success )....
......so there you have it.....the raspberry adds just enough tang to tickle your tastebuds....I made it one year with strawberries (too sweet), and blueberries (not enough taste), so do stick with the raspberries.....if any of you do try it, please LMK what you think.....it's one of the best desserts I have ever tasted.....check it out!!!....TR
