Great topic...
Saw Moxy at the Canadian World Music Festival in '79, Wilcox and Tom Cochrane at my college back in the early 80's, Rush & the Guess Who at the Sars concert, Neil at the ACC, Triumph at the Gardens (it's becoming a blurrr and I'm sure I'm missing some), April Wine at the Sound Academy, but the best homegrown talent in my opinion was Burton Cummings - solo, at the Band Shell, Ontario Place!!! It was a perfect summer evening, about a thousand people and Burton jamming on his piano for close to 3 hours (and a bottle of Scotch by his side)!!!

I used to work in a used CD shop on Yonge St. Burton was a regular, but he never came in while I was there. The guy I worked for owned two stores, one across the street from the other. The only time I actually saw him there was the one day he visited one store, but not the other, lol. (I spotted him leaving)
I saw April Wine a few years ago at a bar on King St (I think?). I was seeing a girl who was a huge fan. We waited around after the show, and as they were tossing people out, she told one of the security guards "Oh, just tell them Leanne is here". They came out after a few minutes to chat with some people hanging around. Very cool bunch of guys.
Blue Rodeo would be my personal favourite, though. I've seen them a number of times over the years, from Nathan Phillips Square on NYE to the Palais Royale to SkyDome, opening for Simon & Garfunkel. Never a bad show.
