Anyone have any good lasagna recipes???
I have a pot of sauce simmering, but I need some suggestions to jazz it up a bit.
Not sure what type of lasagna you are making but if it is a meat recipe try this;
Italian sausage hot or mild - cook, remove casing and ground up with either veal or beef and some of the tomato sauce. Keep some plain sauce for topping and filling the pan.
Cheese - mix Mozzerella, Ricotta and parmesean together until it becomes sort of solid. Then flatten out to desired thickness using parchment paper and use as layer.
After building the lasagna, use tomato sauce to fill the rest of the pan and the top of the noodles, and most importantly do not add the top layer of mozzerella until the last five to ten minutes when baking.

Thanks for all your lasagna hints. I have just added a few ounces of chianti to the sauce too.
I have always added ricotta mixed with an egg and some chopped parsley, but it is getting dull. So I am going to try out a couple of the suggestions that you SC have given me.
My daughters are coming for dinner and I want to make it a nice night for us in spite of my rotten cold.
