I find red potatoes work best. Golden Russet have a funny taste to them.
Cut potatoes into 1cm sticks
Boil until soft, strain & let sit in strainer while deep fryer warms up. you don't want to put wet potatoes in hot oil
Deep fry 8 minutes at 325
Remove
(At this point you can store them in your fridge to make later)
increase deep fryer heat to 375
Deep fry 5 minutes
Season & serve
I know it may seen like alot of work for fries but it's so worth it!
