The blocks freeze better than the tubs. I found the tub cream cheese is kinda 'grainy' once it thaws and it stays 'grainy' even when whipped, to go in a dip. It doesn't affect the taste, just the look of it! Never any problem with the brick style though.

I tried freezing the bricks after reading on SC that it can be done, but found that it went crumbly after thawing in the fridge.

dreamcatcher - I just cream it with a wooden spoon after thawing it, it works fine. Sure, you could use a mixer. Usually I use it for cheesecake, so I end up using the mixer in the end anyways.

Got me some cheap cream cheese today. DD did some googling and some of the cheesecake recipes calls for 5 bricks, yikes!!
I have a recipe from Pol Martin that I have been using but willing to try other recipes now that I have cheap cream cheese to experiment. Also got a brand new Whirlpool stove this weekend so need to test cooking temperature too, lol.
We like our cheesecake plain so please share your recipes if you have any.

I found that the regular creamcheese freeses better than the light. I think it is because to make them "light" they add milk/water whatever and that makes it go strange.
I have found that the phily ones also freeze better than they other brands, not sure why.
