    0
    Jerk pork stew ( i use beef instead )
    3 green onions
    1/4 cup flour
    1 tsp dried thyme
    1/2 tsp ground allspice
    1/4 tsp cayenne pepper
    1 lb trimmed and cubed pork (or beef or chicken.. which ever you prefer)
    3 tbsp vegetable oil
    6 cloves garlic, minced
    1 tbsp ginger root, minced
    2 cups chicken stock
    2 tbsp soy sauce
    1 tbsp brown sugar
    (i also add veggies to mine but that's optional)

    (makes 4 servings, double up for a nice sized pot full)



    chop onions, reserving white and green parts separate

    In a plastic bag, combine flour, thyme, allspice, and cayenne, add meat and shake to coat, reserving the remaining flour mixture.

    in large sauce pan or wok, heat 2 tbsp oil over medium heat, fry meat to a brown .. remove to a plate. add remaining oil to pain, fry white parts of onion, garlic, ginger for 2-3 minutes. add flour mixture left over, stir 1 minutes, add stock and 1 cup water.. bring to boil, scraping the brown bits.

    Add the meat, and any juices to pan, stir in soy sauce and brown sugar. reduce, cover and simmer until tender.. about 45 minutes (i do an hour) add green parts of onions and stir. (if stew isn't thick to your liking, add a bit of flour)



    This recipe is AMAZING. My family goes crazy for it.

    It sounds amazing. I will have to try it. I think I'll make it with chicken, maybe serve it over some rice.

    yeah it calls to serve over a favourite side, like rice or potatoes.. i just made a triple the recipe pot last night, it's so good...
