Here you go Jessep. this one is really moist.The trick with banana bread is to have all your ingredients at room temperature and do not over mix when you add the dry ingredients to the wet. If you don't have buttermilk you can add lemon juice or vinegar to regular milk and let sit until it curdles.I usually double this for two large loaf pans or make one loaf and a batch of muffins.I also add mini chocolate chips and walnuts.Hope you like it.
Ingredients
- 2 eggs, beaten
- 1/3 cup buttermilk
- 1/2 cup vegetable oil
- 1 cup mashed bananas
- 3/4 cups white sugar
- 3/4 cup brown sugar
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped pecans (optional)
Directions
- Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
- Beat sugars with oil and blend together with the eggs, buttermilk, and bananas .
- Sift together the flour, baking soda and salt. Add to banana mixture and stir in pecans (or walnuts and chocolate chips). Mix well.
- Pour into prepared loaf pan (i use parchment paper with a bit of pam but you can just grease the pans as well) and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.Let rest on a rack for half hour ,loosen edges with knife and invert on the rack to finishing cooling

I have the same one that has been going through my family for a couple generations now.
This is my recipe:
3 or 4 ripe bananas, smooshed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
pinch of salt
1& 1/2 cup flour
In bread pan - oven @ 350F & bake for 1 hour
Here's a recipe for banana chocolate chip loaf that turns out great everytime. If you don't want the chocolate chips, just leave them out. (I usually store my over-ripe bananas in the freezer in a 750g yogurt container. That's generally enough to make 2 loaves so I just double the recipe.)
1/2 cup butter or margarine
1 cup sugar
2 eggs
1 cup very ripe bananas, mashed (approx. 3)
1 3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
handful of chocolate chips (optional)
1. Cream together butter or margarine and sugar
2. Beat in eggs, one at a time
3. Add mashed bananas and blend
4. Combine dry ingredients
5. Add to banana mixture
6. Stir until just moistened
7. Pour into loaf pan
8. Bake at 325 1 hour.
Thank you ‘Retiree’ for the banana chocolate chip recipe. But I feel there is too much fat included in it, does anyone have any idea to avoid the fatty ingredients
Just made some yesterday; here's my recipe.
1/2 c margarine
1 c white sugar
2 beaten eggs
2 c flour
1 t baking soda
1/2 t salt
2 or 3 mashed bananas
1/2 cup chopped walnuts, 1/4 cup coconut
(can add choc chips, but I don't like them although my son does)
Cream margarine and sugar, add eggs and mix.
Fold in dry ingredients and mix well, then add bananas.
Add nuts and coconut.
Put in greased loaf pan.
Bake at 350 degrees 40 minutes, then cover with foil and bake another 10 to 15 minutes til toothpick inserted comes out clean.
Cool in pan about 10 minutes, then remove to cool.

Note - I started doing the foil thing, and it's really improved the quality/texture of the loaf - you still get the nice crust, but no more soggy middle!
I have not made any good baked treats since the diet, but I always made banana bread with the Take 5 method.
Five ingredients, that is it.
1 cup Miracle Whip
1 cup mashed ripe banana
2 cups all purpose flour
3/4 cup brown sugar
2 teaspoons baking soda
preheat oven 350 degrees
Mix Miracle Whip, and banana. In separate bowl combine dry ingredients. Add dry to wet mixture.
Pour into greased 9 x 5 loaf pan.
Bake 45-55 minutes.
Yummy and moist!

Well I've got a freezer full of bananas , but I have whole wheat flour, will that change the bread? or is it ok to use it?
Whole wheat flour will make a heavier and more dense loaf, best to find a recipe using it.

I like all stuffs of banana, i too need this recipe to prepare banana bread.
I have one I will post later when the kids are in bed, it is to dieeee for and almost everyone who has it says it reminds them of their grandmas banana bread!
This is a combination of a few recipes I've found that I put together to make it the way I like :) But....not low fat...just warning!
Ingredients:
½ cup melted butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups flour
1 tsp. Baking soda
½ tsp. Salt
1 teaspoon cinnamon
½ cup sour cream
½ cup chopped walnuts
½ cup Chocolate/butterscotch/white chocolate chips (Optional – add 5-10 mins to baking time if adding chips)
3 mushed up bananas
¼ cup brown sugar
sugar and cinnamon to sprinkle
Directions:
Preheat oven to 350.
Spray a 9x5 inch loaf pan with cooking spray. Sprinkling the inside and sides with sugar and then with cinnamon.
Use a large bowl and stir together the melted butter and sugar. Add the eggs and vanilla and mix well.
In a separate bowl, combine the flour, baking soda, salt, and cinnamon. Stir it into the butter mixture until smooth.
Fold in the sour cream, bananas, and nuts (and chips if you choose...).
Spread it evenly into the prepared pan.
Top with brown sugar. (I just approximated how much brown sugar I put on the top. It will look like it's too much brown sugar but it bakes in.)
Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing to a wire rack to cool completely. I suggest putting the loaf in a container before it's totally cool so that the crust can absorb some moisture and soften up.
