you reminded me to start using my bread machine that I bought couple of years ago and now sitting in the basement!!! I hope it still works. found a bread machine recipe now and will make a bread tonight hopefully :)
This thread made me go out and get a bread machine (secondhand to experiment with)... and I like it :)
I have a 12 year old boy who has grown over 3 inches taller since Jan (now 5'6"). He is always hungry, and more than once has said "I'm not full, I'm just tired of chewing". So I sent him to school with 2 sandwiches from the homemade white bread, and he says he got full from just 1 1/2 :D He's so active (he does every sport the school offers, and works on the farm on the weekends) it's impossible to get any weight on him... this thicker heavier bread might actually do it.
My husband bought me a Black and Decker model for Christmas last year. The only loaf I made was not very good ( to say the least). Seeing this thread made me want to try again. Any recommendations on recipes/methods/etc?
The recipes on the robinhood.ca site are really good. When I first got my machine I used a recipe that came with the machine and it was horrible! I was so dissapointed. I tried another one from robinhood which was simpler by a long shot and it turned out perfectly.
Sometimes you have to experiment to get an awesome loaf. You should always use fresh ingredients....do not skimp out! It makes such a difference. A few people I know do not like how their breadmaker actually bakes the bread, so they let the machine do the work of kneading/rising, and take it out and put the dough in their own pan in the oven instead. I have a Zojirushi model and I absolutely would buy it again a million times over. It has never once baked anything but a perfect loaf! The recipes that came with the machine are awesome too, I just love it and I would totally recommend it to anyone!
You may need to fiddle with the recipe a bit- I am still "finesse-ing" the recipe. I am using unbleached flour in the white bread recipe, and it does affect the science of the bread. I haven't moved unto other recipes yet.
One very important thing about my machine is that the ALL the ingredients must be at room temperature. If I measure any of them cold- the loaf just doesn't turn out as well.
I'm growing a sourdough starter right now, and hope to have the machine do the rest of the work :)
I am now munching on the sourdough I made after watching a youtube video by Jan Charles. It's soooo simple to make sourdough starter, and only took me about 30 hours to see results. The bread does not taste as sour as the loaves I was buying at the store, this is light in flavour and texture... it's practically white bread :D And it seems to be idiot proof (it was 2am when I was baking, and read the instructions wrong... twice... but 2 beautiful loaves just came out looking and tasting fabulous!). I'm off to Costco to grab some of the flour that's on sale :D

I finally moved on from basic (unbleached) white to a honey 8 grain for my DH (who is rather particular). It is cooling as I type. Wish me luck for the morning! LOL!
Once this is learned, on to cinnamon raisin. It is our favourite bread for french toast. And french toast is DS' FAVOURITE breakfast.
