I have been busy lately. Dehydrated. Jalapeño peppers, onions, chilly peppers and banana peppers. Then canned raspberry pie filling (raspberries on sale this week at No Frills for $1.00) and also canned pickled beans. My beans are floating also. I did not add chilly pepper flakes to the beans, but I did toss in a couple of actually chilly peppers.

Awesome.. I added the chili peppers and the red pepper flakes but the liquid in mine has turned colour a bit...not cloudy , just nor clear...I am thinking maybe the red pepper flakes?
today I did 4 more jars...mostly cauliflower with some onions and a small amount of carrots and celery. Turned out okay

Peppers can change the color a bit... so can using regular table salt. Regular table salt is iodized and it can taint the food and change the color. Regular table salt is not recommended. Sometimes a slightly cloudy contents can be caused by walmart brand pickling salt. It is not quite the same as the sifto... it has a anti caking agent in it that causes clouding a little bit... but it is still ok to use that one.

Blueberries .99 pkg to make blueberry pie filling (apricots are .79lb and i will post a vid below for that one)
This lady is Perbain on youtube. I didn't pick this recipe because it was the best... I picked it because it is like learning how to can from a loving grandmother. She is just the sweetest kindest lady and the blueberry pie filling turned out to be the best I have ever had.

Canning apricots part 2 They are really easy, the skin says on and they are halved with the pits removed (The vid was from a time when youtube only allowed 10 min vids so it had to be divided up.)

I went to Port Huron, Michigan yesterday and noticed at Meyer's they sell pickling lime. I did not buy any. But what is pickling lime? I was looking for pickling salt and found some.
I am all set to make the bread and butter pickles Cheekysaver posted earlier, as soon as my cucumbers are ripe.

Pickling lime is used to help crisp up the pickles. Bernardin / ball sell pickle crisp. It is more important when you are dealing with dills... otherwise you can trim off the blossom end that contains the enzyme that will make your pickle limp. Some also add a grape leaf into the jar to keep pickles crispy. Some will tell you that pickle crisp is the same as the non bleach pool shock... while this is chemically true they do not tell you that there are other chemicals in there too... so please don't ever use that stuff.
