    Banana-Coconut Cupcakes Serves 12 (dairy free, gluten-free)
    (First for Women, Sept. 3/18 issue)
    Active time: 20 min. Total Time: 50 min.

    2 bananas, mashed
    1/2 cup honey, divided
    3 eggs
    1 lemon, juiced
    1/4 cup coconut oil, melted
    1 tbsp. baking powder
    2-1/2 cups almond flour
    2 (14 oz) cans coconut milk, chilled overnight

    Heat oven to 350F.
    In bowl, mix bananas, 1/4 cup of the honey, eggs, 2 tbsp lemon juice, oil, baking powder and flour.
    Spoon into 12 lined muffin wells. Bake 30 minutes.
    Scoop cream from top of milk cans; beat with remaining honey. Pipe on cupcakes; drizzle with lemon curd, if desired.

    Stacked Brownie S'mores Pie Serves 16
    (FFW Sept. 3/18 issue)
    Active time: 30 min. Total time: 1-1/2 hrs.

    1 (18 oz) box brownie mix
    3 cups flour
    2 tsp. baking powder
    1-1/2 cups brown sugar
    1 tbsp. vanilla extract
    3/4 cup vegetable oil
    1 cup milk
    6 eggs, separated
    3/4 cup chocolate chips
    1 tsp. cream of tartar
    1-1/4 cups powdered sugar
    1/3 cup walnuts, toasted
    1/3 cup chocolate syrup

    1) Heat oven to 350F. Prepare brownie mix as package directs. Bake 25 min. or until done. Let cool. Cut into 2-inch squares.

    2) In bowl mix flour, baking powder and a pinch of salt. Add brown sugar, vanilla extract, oil, milk and egg yolks. Using electric mixer on medium speed, beat 2 min. or until combined. Add chocolate chips; mix until just incorporated. Divide batter between two greased and lined 9-inch cake pans. Bake 20 min. Let cool. Remove from pans.

    *3) Place large heatproof bowl over pot of simmering water; add egg whites and cream of tartar. Using mixer on low speed, beat mixture until it reaches 160F. Remove from heat. Add powdered sugar; beat on high speed until peaks form.

    4) Spoon half the marshmallow cream on top of one cake layer. Top with remaining cake layer. Spoon half the remaining marshmallow cream on top, then place brownies on top. Top with remaining marshmallow cream, walnuts and chocolate syrup.

    *Shortcut-use marshmallow fluff.
    Our homemade meringue filling gives this pie its dreamy melt-in-your-mouth texture and wow-worthy flavor.

    But on some summer days, it's just too hot to stand over the stovetop whisking egg whites to stiff peaks, so our test kitchen director found a savvy shortcut: she folds 2 cups of whipped cream into one 7 oz. jar of prepared marshmallow fluff. This results in a subtly sweet and creamy topping that's ready in minutes--no sweat!

    Mason Jar Peach-Blackberry Cobbler Serves 8

    Active time: 20 min. Total time: 40 min.

    6 peaches, peeled and diced
    2 cups blackberries
    1 lemon, zested and juiced
    1-1/2 tbsp vanilla extract, divided
    1-1/4 cups flour, divided
    1/2 cup sugar, divided
    1/2 stick butter, diced
    1 tbsp baking powder
    1/4 cup buttermilk

    1) Heat oven to 375F. Grease eight 8 oz. Mason jars or ramekins; place on baking sheet. In bowl, toss diced peaches, blackberries, 2 tbsp lemon juice, 1/2 tsp. lemon zest and 1 tbsp. vanilla extract. Add 1/4 cup flour and 1/4 cup sugar. Toss fruit to coat. Spoon fruit mixtures into jars (or ramekins).

    2) In food processor, pulse butter and remaining flour. Add a pinch of salt, baking powder, buttermilk and remaining sugar and vanilla extract. Pulse 30 sec. or until dough forms into sticky ball. Spoon dough over fruit. Bake 20 min. or until golden brown. Serve with whipped cream or ice cream, if desired.

    Dreamy Orange-Glazed Peach Bundt Cake Serves 12
    Active Time: 20 min. Total time: 2 hr

    1-1/2 sticks butter, at room temp.
    1-1/2 cups granulated sugar
    1 orange, zested, juiced and divided
    4 eggs, separated
    1 tbsp. vanilla extract
    1 cup Greek yogurt
    1 tbsp baking powder
    1-3/4 cups flour, divided
    6 peaches, peeled and diced
    1 cup powdered sugar

    1) Heat oven to 350F. With mixer on medium speed, cream butter and granulated sugar. Add 2 tbsp. orange juice, 1 tsp. zest, egg yolks, vanilla, yogurt and baking powder. Mix in 1-1/2 cups flour. In separate bowl, beat egg whites until peaks form; fold into batter.

    2) Toss peaches with remaining flour. Spread half the batter into greased and floured 9" tube pan. Top with half the peaches. Spread rest of peaches on top; cover with rest of peaches. Bake 1 hr., 15 min., covering after 1 hr. Let cool.

    3) In bowl, whisk powdered sugar with 2 tbsp. orange juice. Drizzle over cake.

    Fruit Cobbler with half the effort:

    In 2 quart baking dish, combine 4 cups of mixed berries with 1/4 cup of flour; toss well.

    Top with 1 can of biscuit dough (photo shows Pilsbury Grands Flaky Layers Buttermilk biscuit tube-dough rounds are dropped over berries in baking dish).

    Bake at 375F for 25 minutes.

    And Cottage Life's Fall issue provides a way to use up leftover pancake mix (you'll need 3 cups) for
    Pancake Mix Faux-caccia (makes 4-6 servings)
    1/3 cup olive oil, divided
    3 cups pancake mix
    1/2 tsp. dried oregano
    1/4 tsp. hot pepper flakes (if desired)
    1 cup milk
    2 cloves garlic, minced or pressed
    2 tbsp. grated Parmesan cheese (see tip-no Parmesan left? Use finely grated cheddar or any other firm cheese you've got.)
    1/2 tsp. coarse or kosher salt
    1/2 tsp dried rosemary (or more oregano)
    toppings (optional- tomato, pitted olives, onions, thinly sliced cooked potato, a few sad arugula leaves, a slice of proscuitto, and grapes)

    1. Preheat oven to 400F. Spoon out 2 tbsp of the olive oil into a 9-x-13 inch baking dish and spread it over the bottom and sides.
    2. In a medium bowl, combine the pancake mix, thyme, oregano, and hot pepper flakes. Add the milk and stire until it forms a thick, sticky dough. Knead it lightly by hand, right in the bowl, just until the dough holds together with no dry bits. If the dough seems too dry or doesn't stick together well, you can add up to 2 tbsp. additional milk to make it easier to work with.
    3. Place the dough in the oiled baking dish and, using your fingers, press the dough into the pan in a more-or-less even layer. It will be a fairly thin layer--don't worry. Just squish it in the pan as well as you can (my note-dimples help hold the oil and seasonings).
    4. In a small bowl, stir together the remaining oil and with the minced garlic. Brush this over the dough, then sprinkle evenly with the Parmesan, salt, and rosemary. Now's the time to top the focaccia with any toppings you like.
    5. Place dish in the oven and bake for 20-25 minutes, or until puffed and lightly browned. Cut into squares and serve warm or at room temperature.

    Last Chance Cookie Trifle Makes about 8 servings.
    Uses up open bags of cookies, mostly broken-chocolate chip, oatmeal, cream filled, shortbread.

    For the custard (see Tip)one package of instant or ready-made vanilla pudding (prepared according to package directions) can be used in place of the homemade custard

    1/2 cup granulated sugar
    1-1/2 tbsp. cornstarch
    2 tsp. all-purpose flour
    pinch salt
    2 cups milk
    2 egg yolks, whisked
    1 tbsp. butter
    1 tsp. vanilla extract

    For the whipped cream (tip-you can use frozen whipped topping-you'll need 3 cups/750ml)
    2 cups whipping cream
    2 tbsp granulated sugar

    For the cookie and fruit layer
    16 cookies, broken up into big chunks (about 3 cups crumbled)
    2 cups mixed berries, fresh or frozen (if frozen, don't defrost) plus a few more for garnish (optional)
    1/2 cup jam, any kind (a mixture is fine)

    1) First you need to make the custard. In a medium mixing bowl (Ciel note-using a microwave safe bowl), stir together the sugar, the cornstarch, the flour and the salt. Add the milk and mix well. Microwave on high for 5-7 minutes or until the mixture comes to a boil, stopping to whisk 2 or 3 times as it heats. Remove the bowl from the microwave and add about half of the mixtures to the egg yolks, stirring well. Return this to the hot milk mixtures, and whisk until blended. Continue to microwave on high for 45 seconds to 1 minutes, or until bubbly around the edges, stirring once or twice. It should be smooth and slightly thickened. (If you don't have a microwave, you can make the custard in a saucepan on the stove. Just heat the milk mixture over medium heat as described above, blend with the egg yolks, and cook, stirring constantly until the custard is thickened and smooth.) Stir in butter and vanilla. Let the custard cool to room temperature.

    2) When the custard has cooled, whip the cream with the 2 tbsp of sugar until soft peaks form.

    3) Now it's time to put together your masterpiece. Have ready a 3-quart bowl-preferably glass so everyone can admire the beautiful layers (or you can use individual glasses or brandy snifters to make individual trifles). A traditional trifle bowl has straight sides but we're not going to nitpick here. Sprinkle half of the crumbled cookies into the bottom of the bowl. Add half of the berries on top of the cookies, then drop spoonfuls of half of the jam here and there over top of the berries. Spoon half of the custard over top of all of this, spreading to cover everything, then spoon half of the whipping cream over the custard. Repeat the layers--cookies, berries, jam, custard and finally whipped cream. Spread the whipped cream layer so that it's nice and smooth on top, and garnish with a few additional berries, if you have them.

    4) Cover the bowl with plastic wrap and place in the refrigerator for 6-8 hours or overnight, to allow the cookies some time to soften and get acquainted with the berries.

    5) Try not to be too smug when you serve this. It was easy.
