I always bake cookies and banana bread but rarely do a yeast bread any more. I was so inspired by this thread that I hauled out my bread machine (it is almost 19 yrs old) and used it to make the dough for a fresh baked loaf for supper. Usually on sunday I buy a loaf at the store but this was warm and yummy and so mcuh better and costs only pennies to make as I had everything on hand.
I decided no more stuffing the bread machine in the back of the cupboard. I am going to put in a shelf in the panty that is easy to get to and will serve as a reminder to use it.Friends don't let real friends pay full price.

So, we went to the Value Village sale yesterday. Tempting fate? Maybe- but I only looked for certain things: sewing supplies and patterns. And I didn't buy anything. DH chipped in to help DS buy that super large metal Tonka Dump Truck they made a few years ago. It's huge. He can sit in the thing! This was one of those times when VV undervalued an item- so we grabbed it- FAST!
Three days to go and $46.00 over budget. This is not serious as we were trying to live off of DH's income- not mine. DH had a few sick days (no coverage) so everything considered, quite happy with how everything worked out.ROAK a Huggies or Pampers code to my local pregnancy centre- toys, clothes, food & diapers always needed!

February may soon be over but I plan on keeping this up in March too. Still lots of food in the freezer.
$222.80 spent on groceries (includes pets) & $84.50 in coupons used.
$28.08 over budget as I had to stock up on seeds for my outdoor feathered friends.
I also plan on tracking my no spend days unlike before.

That's awesome the little guy must be so excited about the truck (lol). $46.00 over budget is awesome, we all have those hiccups along the way.
We are also trying to live/survive on 1 income, it's hard to do and I honestly understand with the sick days etc. and my dh's pay is never the same so it's hard to budget.
You're doing awesome!

You did fantastic, I know I'm still trying to work the unexpected bugs that happened along the way BUT it's been so great having this thread to come to for support, guidance and kind words from others that are doing the same challenge and challenge it has been at some moments (lol).

Me, I'm on budget, that's about it lol.
My changes this month: tracking spending, eating at home, meal planning.
I took my Mom (who visited this weekend) out to brunch and we went to walmart...I spent only $24 which is a huge deal for me lol...
So I still consider my February a success and I am a work in progress
Last night I sent the hubby to Sobeys to pick up a bbq chicken (I made the sides) for supper. Meal #1.
I've been boiling the carcass all morning and plan to make chicken soup which will be Meal #2 or hot lunches for the girls.
Anyone care to share their homemade chicken soup recipe?

I blew my budget last week. I wasn`t going to buy any more towels but I found a great price on patterns that I didn`t have so I bought a bunch. I use them for crafts that I sell so will eventually get my money back.

Casey, here's mine - (also, check out the Food and recipes section for lots more ideas!)
I use a whole chicken or eight pieces of thighs/backs - making it with breast meat alone doesn't give enough flavour.
If I happen to have a bag in the freezer after I've deboned breasts, I'll use those, but also add some whole dark meat pieces for flavour.
In my biggest pot, along with the chicken I add one onion cut in half, carrots, and only sometimes celery (it does add a different flavour).
For seasoning, I use a good amount of salt, about a dozen black peppercorns - and I think the magic is in adding about six big bay leaves.
I've never measured the water I add, it's 3/4 of a big pot.
I simmer it for an hour and a half. I don't skim (only with pork).
I remove the chicken to a platter, and put the carrot pieces in another pot into which I strain the broth. I discard the onions, celery and seasonings.
I make fine egg noodles separately to use in the soup, then people can put in their bowl the ratio of noodles to broth they like, and add cut up bits of chicken if they wish.

Most of the time, I make the broth earlier in the day, then in the afternoon I can pick apart the chicken meat and save it to use in another recipe for another day - usually a stew, my son's favourite. For me and my son, having soup is enough for the meal.
My husband eats all the rest after I've taken the meat off - he's quite the garburator (with some help from the kitties!).
